Burrificio Italiano Tipopils Zymatore tap flight at Bavarian Lodge. Light golden, almost straw colored pour. White head coats the glass. Tart wood, sour candy, and a nutty malt finish. The layers aren’t to broad but diverse enough to make this interesting. Slightly sour in the mouth. Draft, identified as Tipopils: Zymatore. Small white head atop hazy apple juice body. Aroma is moderately sweet, lactobacillus, white wine, some lemon. Taste is moderately sweet, lactobacillus, Sprite, some white wine. Light body, some acidity, quite drinkable. Completely unlike the original, and completely devoid of Whiskey characteristics. On tap at Louisville Beer Store. Aroma was mostly whiskey; quite sour, but with some white grape, hay and light noble hops. Appearance was pale hazy yellow with white head. Flavor was pretty sour, really; I almost wonder if this should be classified as a sour/wild ale with it’s whiskey treatment. Palate is lightly bubbly and soft. Very good.
