Cocoa-Bretta is an organic collaboration cheer that combines Bison’s award winning Chocolate Stout and Logsdon Farmhouse Ales’ Bretta. This stout beer was brewed with cocoa, multiple yeasts, finished with strains of Brettanoymces, and then keg conditioned with pear juice.

On draft at the Livermore Saloon. It pours dark brown with a khaki head. The aroma is cocoa powder, cherry pie, mild toast and funk. The flavor is pleasantly chocolaty with cherry, wheat and a lightly funky finish. Only hints of sour. Interesting beer.

Tap at Churchill’s Sour Fest. Pours near black with nice coffee foam. Nose is cocoa mix, richer chocolate syrup, no Brett or funk really. Taste is a bit drained/aerated from the Brett, cocoa, lemon, chocolate. Dusty palate, a tad chalky with a hefty lemon citric bite in the finale. Pretty nice if a bit odd.

Stone Sour Fest 2013. Dark brown pour with an off-white head. The nose is sour and chocolatey. Lemon, cocoa powder, vinegar, oak, and roasted malt. There is a hint of sweet dark fruit. Kind of a chalky, ashy flavor. Roasted malt, cocoa powder, lemon, and a touch of vinegar. Bitter dark chocolate, grass, and some subtle fruitiness. It wasn’t terrible, but it wasn’t something I’d care to drink.

Draft. Pours a near black, with a tannish head. Dark chocolate, sourness, light funk, cocoa, roast, sweetness, and some fruit. The body is too thin, but overall this was enjoyable and quite interesting.

Cloudy deep brown like muddy water light smells of cocoa. Great rich taste roasted chocolate with killer tart finish. Ending is very refreshing. Amazing!

On tap at Capitol Beer, Sacramento. Pours near black with a nice tan head and a chocolate and coffee aroma. There is a sour dark molasses flavor with a dry finish. Complex and tasty.

Tap at Capitol Beer in Sacramento, CA. Pours black with reddish orange glints a a creamy darker tan head. Mild sour/tart aroma with a touch of chocolate. 2nd smell was very smooth darkish chocolate. Med + body. Flavor is mixed chocolate, hop, lightly sour. I’d say tart is not in it. Mildly bitter chocolate, some light brett, and some fruit for the finish. Just excellent.
