For the winter season, we traditionally make a Belgian-style Dubbel; a rich malty pleasure that is the perfect accompaniment to those long winter nights. Last year we decided to play around with the concept and see where it might take us. After much tinkering -with a number of unique ingredients combined with wood barrel aging- we arrived at this wonderful juxtaposition of fruitiness and maltiness which harmonized magically to produce this delicious winter warmer.

The designation of "Grand Cru" originates from the Burgundy region of France. Brewers have taken the term and applied to it more elaborate, aged and reserved versions of their beers. Our Belgian-style Dubbel -a great beer itself with a loyal following- has been taken to the next level by the careful blending and aging techniques. We believe weve created a classic to be enjoyed throughout the winter months.

For 2010, we offer a very limited release of (only 48 barrels) our Winter Grand Cru. In this batch, weve added over 100 pounds each of locally sourced Zante Currants and Black Mission Figs. We aged 20% in used Bourbon barrels for 12 months - in which time the warmth of the Bourbon, along with toasted oak and vanilla flavors were released from the wood. Whole Vanilla beans compliment the wood and bring forth a velvety smoothness and richness. The fig flavor is forward on the nose along with the bubble-gum/banana ester derived during fermentation. The taste starts with the rich sweetness of fruit, carries through with a rich mellow center and finishes dry, allowing for another glass as you sit by the cozy fire. votre sant!

Pairings: Lamb, wild game, charcuterie, pt, duck, rabbit, braised short ribs, cherry reductions, bread pudding.

Nez au dpart hyper thylique puis on repart sur le bourbon et un fond de chne. Bouche largement plus lgre, riche et quilibre. On retrouve les fruits, le vieillissement. Bien foutue.

Bottle. Clear copper pour with a medium tan head. Aroma of malt, caramel, roast and bourbon. Malty and caramelly flavor with some bourbon, sugar and toffee accents before an estery finish.

Bottle 75cl a dark ber with medium head. Nose is on quetches oxydized notes. Aroma is on dark malt licorice oxydized et wood sour background.

Ruby red - brown colored, unclear, medium- creamy beige to tan head. Aroma is of caramel and toffee, bit toasty, raisins and some vanilla, oak and vinous. Taste is medium sweet malt with caramel and toffee notes, bit raisins, vinous with some tartness, oak and some vanilla. Medium+ bodied, soft carbonation, oily. Not bad at all. (bottle, Vrutak, Zagreb)

Feb. 16. A 0.65 l bottle from Pivoteka, Zagreb. It poured almost clear copper (mračno je, ne vidin) body with a small, short living head. Strong aroma of bourbon, alcohol, caramel, vanilla, touched with yeast. Not bad at all! Flavor was lightly sweet, with caramel, dried and dark fruits. Also lightly bitter/sour with wood and alcohol, especially towards the finish. Medium bodied with lots of carbonation on palate. Long finish, bitter, wood, bourbon, lightly sour peat and other subtle things and spices. Very nice aftertaste. Barrel aging distanced it from being too Belgian, seemed more like some barley wine. Even though I was not so impressed at first, it was definitely a pleasant and an interesting brew.

Tap. Fizzy, bubbly eggshell head; coppery dark hazy brown. Alcohol; pears; prunes; candy sweetness; and toffee in the aroma. Flavor carries much more of the bourbon; boozy; some prunes; bready spiciness; and a dark fruit finish. Bit sweet for me. Medium body with bubbly vibrant carbonation.

0.66l bottle. Misty amber color with nice browny head. Nice smell of bourbon. Aroma of cherries, plum, malt and coffee. Taste is sour and little bitter and sweet with some alcohol present. More acidic than expected, but good stuff.

From Pivoteka, shared with Mario, thanks! Unsure of the vintage - 75% "ale with fruit with vanilla beans added, 25% ale aged in bourbon barrels." Shiny ruby-brown body with a tiny off white head. Aroma - raisins and vague bourbon. Taste... raisins, fruity in general, vague tartness, light coffee, far from excessively sour, mild puckering. Slightly dry finish, notes of grapes. Actually a very nice beer, without being a thriller.

Bottle, 1 pint 6oz. @Naintr, with dad and mom. A very dark brown sparkling beer with a big beige creamy head ; average retention. Roast, toast, blackberry, blackcurrant, wood, nut, vanilla, prune. Medium sweet, light to medium acid, dry bitter note, light refreshing, warming background. Medium body, average texture, light oily, average carbonation, sweet acid medium finish. Overall, a beautiful beer with a stormy fruity aroma ; makes me think of a flemish sour beer ; really good ; nice woody touch.
