In developing this Belgian-style Pale Ale we could not arrive at a single yeast strain that conveyed the flavors we wanted. We were striving for some Belgian funkiness without being too funky. At last our mad Brewmaster Derek decided to brew the beer in two batches with two yeast strains and blend them post fermentation. Voilà, he had nailed it.The rye malt adds subtle spicy malt tones, aromatic for breadiness/ maltiness, and the Cara20 for sweetness and color. Sterling hops are derived from Saaz and Cascade hops and have a spiciness with subtle orange/ grapefruit tones. Liberty hops have a German Noble hop flavor and aroma (earthy, spearmint-like). The first yeast gives it a nice clean flavor with subtle aromas of pear/apple and honey, but not much Belgian character. The second yeast emphasizes the Belgian character, with more spiciness from the phenols. They are fermented separately to ensure consistent amounts of yeast cultures in subsequent brews, and then blended during filtration.

Clear orange pour big head. Aroma peppery funk. Taste is spicy rye grains meet banana belgian yeast. Aroma hops flavor slight bitter. Slight sticky yet watery palate. Lighter carb. More sessionable than most belgians due to pilsner characteristics/less yeastiness. Well balanced. The rye and saison funk flavor keeps me coming back.

Bottled 355ml. -from Pivoteka Zagreb, shared with Marko. Darker golden coloured, small to medium sized off-white head, dust and fruits in the nose. Sweetish malty, some herbs, light fruity hoppy and again notes of dust and spices in the finish. Nothing special here, stays just on paper and not in my memory.

Bottle from Pivoteka, shared with ogivlado. Full golden body, medium white head, lasting. Aroma... fruit compote but in a good way, apples and peaches. slightly dusty, light fruity tartness that’s completely integrated with other flavors. Likable aroma all in all - not cloying, most importantly. Bit malty, spicy and dusty. Light fruity taste, peach again, a bit on the dry side, light dust, lighter still herbal bitterness, just trace sweetness. Tasty, but not impressively so, trace beets too. Eh, just OK. The American craft beers we get here are pretty much, unfortunately, consistently underwhelming, bar some notable exceptions.

Clear amber to copper colored, moderate to strong offwhite creamy lasting head. Aroma of caramel, rye and honey, bit belgian yeast and bit spice. Taste is moderate+ sweet caramel, honey, some rye, some spice and orange, bits of yeast. Light to medium bodied, moderate carbonation. Maybe not as Belgian as it should be but very drinkable and enjoyable. (0,33 from Pivoteka Zagreb)

12oz bottle - Aroma - floral hop note, touch of citrus/orange peel, and white sugar Appearance - clear golden body, sturdy 2-finger head, above average retention, lacing was lacking a bit Mouthfeel - light-medium carbonation, medium bodied, a little thicker than what I expected Flavor - clean flavor profile, light malt flavor, light herbal/floral hop if you look for it and finishes on the dry side. Overall - highly quaffable. The 6-pack didn’t stand a chance. Really nice price too.

"boooooo.... sorry. fell asleep just thinking about it. boring beer, nothing horrible, but definitely not good. next to "the LIbrary" in Laramie, this may be the most boring microbrewery. Pale, fairly flavorless, lacking distinct aroma. You get the picture..."

bkurtz (1151) - LITHUANIA - SEP 25, 2014
