October 17, 2014 - at Bar Hop, on draught. Flat-looking red with minimal head. Sweaty/sweet and spicy aroma - a little licorice and alcohol (7-). Taste is very sweet, oddly herbal bitter and green - there’s yeast here, but it seems a little raw. Slick, syrupy, still mouthfeel- a little burnt sugar in the finsh. .... yeah, nah.

A deep dark brown ale with a thin mocha head. In aroma, sweet fruity caramel malt with light candy sugar, light vanilla, cinnamon, interesting. In mouth, sweet fruity malt with candy sugar, light curacao, dark, plums, pleasant. Bottle at Chuck and April’s Cellar Tasting.

Thanks to whoever (received in a CanBIF box a while back), poured in a Chimay chalice. Pours a clear ruby red with a small offwhite head that leaves nice lacing. Nose is of booze and christmas spices (crushed candy canes), reminescent of LTM’s Réserve de Noël in a way. Taste is light sweet, not too boozy, but offers the same spices. Some spicy oak, too. Maybe some interplay between the booze and the cherry wood? Anyhow, pretty good but far from the traditional quadrupel. Body is medium, carbonation moderate and texture is slightly syrupy. Overall an interesting strong ale but not a quad.

Great drink. You can pick out the cherry wood flavours which give this beer a unique finish.

[7259-20150530] 650mL bottle. Fragrant cherry wood aroma. Clear, red brown body with a quick foamy off-white head. Toasted woody flavour has a fruity roasted cherry infusion. Medium-full body. Good, simple. (7/3/7/3/14) 3.4

2015-05-30. Lightly hazy dark red-brown body with a modest beige head. 3++ Aroma is pleasantly sweet relatively mild, fruity, lightly vinous. Flavour is similar, fruity, lightly vinous character. Malty core. Smooth average plus bodied palate, soft carbonation. A touch less vinous than I remember it from previous samples. Bottle from the LCBO, Toronto.

Bottle: Poured a clear brown color ale with a medium size light brown foamy head with good retention but minimal lacing. Aroma of candi sugar with dry plums and light candy ester is quite enticing. Taste is also a nice mix between some candi sugar notes with some candy ester and light dry plums and raisins notes. Cherry wood notes are noticeable and seems to ensure there is no rough edges on this beer. Body is bit light for style with good carbonation and no apparent alcohol. Quiet enjoyable beer even though it is not as great as some of the staple of the style.

Dark brown pour, decent size head. Spice, brown sugar aroma. Unusual spicy notes. Dark fruit, sweet. Medium body
