COMMERCIAL DESCRIPTION
Inspired by crisp December nights on our estate in the foothills of the Great Smoky Mountains, this Saison is reminiscent of the natural nuances of winter. Light and dark wheat add palate fullness to this saison’s floor malted barley backbone. Abbey-style character malts and our flavorful yeast strain develop complex dark fruit notes, while Styrian Golding hops bring a subtle counterbalance of bitterness. MALTS: Weyermann Floor Malted Pilsner, Floor Malted Dark, Floor Malted Wheat, Abbey, Special W, and Chocolate Malt. HOPS: Styrian Aurora, UK Golding. YEAST: Classic Saison.

Bottle shared in Hackney - sourced from Beergium. Pours deep brown with a creamy, tan head. The nose holds brown bread, Belgian yeast, toffee. Light to medium sweet flavour with notes of brown bread, ripe berries, creamy toffee. Medium bodied with fine to average carbonation. Nicely balanced finish, with further Belgian yeast, hints of cocoa, more ripe and dried berries. Fun, enjoyable beer.

Bottle shared at Leightons place. Thanks! A clear mahogany brown coloured pour with ruby red hues, a small beige head. Aroma is semi sweet, nutty malts, jammy fruits, blackberry jam, wood, grape jelly. Flavour is composed of semi sweet nutty malts, jelly grape, jammy blackberry, woody. Palate is semi sweet, moderate carbonation, ok.

Bottle, 2016 edition. Dark brown with a medium sized light brown head with good retention and regeneration. Very pleasant nose with dark bread, rye bread, light burnt sugar and wood. The flavour follows the nose with dark bread, rye bread, burnt sugar, twigs and light nuts. Mild sweet and light to medium bitter. Long finish with dark malts, brad and burnt sugar. Malty yet light. Nice.

750mL bottle, pours black with lots of sediment and a large tan head. Aroma brings out lots of earthy notes, spicy yeast, and some a little nutmeg. Flavour is along the same lines, with lots of saison yeast, earthiness and nutmeg. Nicely spicy and with a great use of yeast. Excellent.

From the tap at FOB, Rimini, Italy. Pours almost black with cream-colored foam. Aroma is toasted barley and slightly balsamic and acetic. Body is medium, with some stickiness. Taste has limited sweetness and bitterness but also some sourness. The bitterness is soil, not from citrus feeling. Finish is long and "weird", in the dense that it leaves an aftertaste that I struggle to identify, maybe consistent with that balsamic/acetic aroma.

11/5/16. On tap at Sweetgrass. Dark dark brown pour under a fluffy tan head, good lacing. Nice aroma, complex, if not a bit odd, mild funk, esters, but also hints of chocolate, dark fruits, honey. Good flavor, a meld of fruits, dark fruits, honey, vanilla, chocolate, and caramel. Tasty.
