COMMERCIAL DESCRIPTION
Inspired by crisp December nights on our estate in the foothills of the Great Smoky Mountains, this Saison is reminiscent of the natural nuances of winter. Light and dark wheat add palate fullness to this saisonís floor malted barley backbone. Abbey-style character malts and our flavorful yeast strain develop complex dark fruit notes, while Styrian Golding hops bring a subtle counterbalance of bitterness. MALTS: Weyermann Floor Malted Pilsner, Floor Malted Dark, Floor Malted Wheat, Abbey, Special W, and Chocolate Malt. HOPS: Styrian Aurora, UK Golding. YEAST: Classic Saison.

From the tap at FOB, Rimini, Italy. Pours almost black with cream-colored foam. Aroma is toasted barley and slightly balsamic and acetic. Body is medium, with some stickiness. Taste has limited sweetness and bitterness but also some sourness. The bitterness is soil, not from citrus feeling. Finish is long and "weird", in the dense that it leaves an aftertaste that I struggle to identify, maybe consistent with that balsamic/acetic aroma.

11/5/16. On tap at Sweetgrass. Dark dark brown pour under a fluffy tan head, good lacing. Nice aroma, complex, if not a bit odd, mild funk, esters, but also hints of chocolate, dark fruits, honey. Good flavor, a meld of fruits, dark fruits, honey, vanilla, chocolate, and caramel. Tasty.

Draught at Luluís, 1/15/17.
Lovely-looking chestnut-mahogany, good clarity, with a small-to-medium-sized, dark beige head that shows moderate to moderately-strong retention.
Very light chocolate brushes against the nose while light caramel and honey move in to place, setting a very strong backbone for the fruity hop and ester notes. Ranging from cherry to raisin to apple, it shows mostly elegant, restrained esters (no bubble gum, peach, only a touch of banana) and light phenols that are wrapped in to the specialty malts (light pepper and earth, no clove). No alcohol or flaw and nicely balanced, suggesting to be on the sweeter side of dry, from the nose.
In the mouth itís silky-soft and well-malted with a good attenuation, leaving the beer mostly dry, though with interludes of rich honey-chocolate-caramel. Nuts, raisins and cherries emanate from the specialty malts, but importantly, itís neither roasty, husky or bready. Vanilla, very light banana and light date notes are intertwined with light acidity. Low but engaging carbonation and no alcohol or flaw noted. Very nice, again as with some of their saisons, itís perhaps just a shade sweeter than Iíd like, but thatís nitpicking for the most part.
