For a 3 barrel (93 gallon) batch, 60 pounds of honey from the Catskills is added at the beginning of the boil, and a bit of local organic basil (sourced from my wife’s Seedsower Farm and/or Makinajian Farm in Huntington) is chopped up and added at the last 15 minutes of the boil. (The recipe is available here for any home brewers who might want to give this a try.) An earthy and floral ale. This beer is part of Blind Bat’s Farm-and-Garden series of beers using local ingredients.

50cl / 1pt 0.9 fl.oz. bottle. Sweetish-sour herbal aroma. Like dry coke in a beer without sugar. Malty herbal body. The honey is in the background, herbal malt there as well. Somehow strange with no bitterness.

750 ml corked and caged bottle. Pours a lightly hazed golden amber with a thin-moderate off-white head that lasted through the first two sips and left scant lace. Mild aroma of citrus and honey. I really didn’t pick up much of the basil in the nose. The flavor is malt and honey with some mild honey sweetness, orange, and very noticeable basil. Very mild bitterness at the finish. Light-medium bodied.

murky amber, totally still, thinnest white ring. Nose is basil and tea, light citrus lingering. Flavor is more basil, stinging wheat and light citrus, sticky through end.

500mL. Pours clear tea amber with weak foam, bubbles. Nose is excellent fresh herbal tea. Taste is weak tea, bland. Palate is lemon tea with mild acid. Huh.

50cl bottle pours a hazy orange amber with some spitty, white head. Nose has plenty of basil, almost a little basil seed, a little tarragon, licorice, some sweetness. Flavor is nice, sweet, herbal, licorice, tarragon, basil. Clean finish.

50cl bottle, thanks nimbleprop. Clear amber body with minimal off-white head. Aroma is moderately sweet, orange, basil, some honey. Taste is moderately sweet, basil, some orange, light honey. Light-medium body, low carbonation, light stickiness.

Bottle shared by Nimbleprop, thanks! Poured a clear amber color with a small off-white head. Aroma is honey notes, some basil notes. Flavor is nice sweet malts, malts, basil character, basil is quite nice.

Bottle shared by Nimbleprop. Pours clear amber with a small, fizzy white head, short retention with spare lacing. Aroma is honey, biscuit malt, basil, and spices. Flavor is malt forward with basil, light hops and bitterness with a sweet finish. Medium body and carbonation.
