COMMERCIAL DESCRIPTION
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

Bottle from Wegmans Sterling - cork says best buy mar 2013 which is weird for a style that ages well - pours pitch with several fingers of head. Aroma has nice whiskey notes which dont become overwhelming when it warms, has vanilla from the oak, and has a nice subtle malted chocolate base. Taste is sweet with the alcohol present, but acts as a nice understated warm mouth feel, which is surprising for a 10% ABV brew. Overall, very nice! Im excited to see what else they produce.

BOTTLE 75 CL. Pitch black, espresso head. Strong bourbon and oak vanilla nose, some milky chocolate. The taste is also strong on barrel notes, but the base beer is quite balanced, with the sweetness kept well under control. Light chocolate and dark caramel notes, strong bitter finish and light booze. Smooth mouthfeel and quite easy-drinking. A good balanced impy.

Celebrating the special occasion of accepting a new job and giving my two weeks notice with this luxurious brew! From about a year old bottle, this pours an impressive jet black with a subtle espresso accent, with a surprisingly full dark khaki head. Aroma is very boozy, smells like straight up whiskey and alcohol, with vanilla and char. On the palate, this is exceptionally smooth and not as boozy as one may expect in the finish, rich and full bodied, reminiscent of chocolate milk. Lots of complex flavors to be discerned, roasted malt, coffee, dark chocolate, vanilla, bourbon, quite enjoyable. Finishes with a coffee bean and roast malt aftertaste, like a classic stout in the end. Very well done! ---Rated via Beer Buddy for iPhone

Pours pitch black with a small brown head fading to tan. Smells of bourbon, vanilla, chocolate, and roast. Taste is dark chocolate, vanilla, oak, and bourbon. Full-bodied with a smooth texture and soft mouth-carbonation, Blue Mountain Dark Hollow finishes with a lot of vanilla oakiness.

Pours pitch black with a small but lacy tab head. Bourbon is in the forefront, but lots of vanilla comes out. Thick creamy mouthfeel. Sweet with some cocoa powder and a good degree of bourbon. Strong and flavorful. Nice clean but rich fade. Well done for a bourbon beer.
