COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Aroma: vinegar cherry Appearance: red clear minimal head Taste: very sour little Bitter Palate: thin watery Overall: interesting aromas but overwhelmed by too strong a sour taste.

My 3rd sour ale after the Rodenbachs. Truly taste the apple side of it and I like the ’Low’ % of alcohol which is not too pronounced.

Bottle from LCBO. Pours a deep purple (!) in the glass. This is a beautiful, mouth puckering sour, like a thick & rich sour candy (minus the sugar). Tastes of balsamic vinegar mixed with unsweetened grape kool-aid & sour cherry juice. Really. Decent member of the sour canon.

Couleur rouge-brunâtre foncé, mince mousse. Arômes de bois fruits rouge, notes acides, En bouche, un beau mélange de boisé, cerises sûres et une acidité prononcée. Très bonne.

Tart fruit (cherries?). Hard candy. Dark garnet. Lots of effervescence. Light tan quickly fading head. Very dry. Very tart. Pretty sure it's cherries. Medium bodied. Lingering sour finish. ---Rated via Beer Buddy for iPhone

Bottle. Pours a dark auburn brown with a good, yellowish-brown head. Aroma is slight cherry, sour, balsamic vinegar. Taste is sour, some red, sour cherry, balsamic vinegar, nicely sour. Tad thin and lively.

Bottle from the LCBO. Clear dark ruby copper with a tiny off white head that is quickly gone. Nose is strong cherry, with lighter wood and vanilla notes. Taste is tart cherry and cranberry with a light fruit sweetness. Mouth is medium with soft carbonation and a slow fading tart finish. 8-/3+/8-/3/15

Lambic de couleur rubis, non coupé et mûri 18 mois en fûts de chêne, cette bière se veut d’après le brasseur (Omer Vander Ghinste) complexe mais très balancée et acide. Le nez confirme en effet l’acidité. A la dégustation la première bouche laisse découvrir une superbe acidité. La seconde bouche ne nous en laisse pas pour compte, avec une acidité intense. C’est alors que l’acidité s’affirme davantage en troisième bouche pour laisser exploser l’acidité sur un final des plus linéaire. Pour la complexité et la bière "balancée", cela reste un mystère. Une ode à l’acidité. Omer Vander Ghinste a su sublimer le vinaigre. Pour cela salades et autres carottes rappées pourront lui en être reconnaissant.

Aroma typically lactic, traces of vanilla. Tastes strongly sour at first but a softer, fruity taste of dried plums, red currant, cherries and some vanilla quickly takes over and lingers. Very complex and refreshing. Unfiltered too, I see: will definately keep some to age.
