The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Bottle @ home. Pours clear deep red/brown with a white coke-like frothy head that dissipates really quick leaving no lacing. Aroma of tart cherries, vinegar, some vanilla and oak. Strong wonderful and puckering sour flavor of lemon juice and zest, with red apple peel. Tart cherries, grape and oak in the background. Light body and sticking carbonation. Finishes dry with oak, dried fruit and some vanilla lingering.

this is a great flanders red. a lot of acid bites through an oaky and almost slightly milky sweetness. it’s been great when i’ve had it on draft but the most recent bottle i had was quite a bit more tart and a little more acetic and less rounded out than on draft. may be that the kegs were more aged??
