The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

Bottle from Bois Cereste in Akasaka. Dark mahogany pour. Some lace. Smells of burnt soy sauce, minerals, apple, strawberry and cherry. Sour from start to finish. Taste is cherry juice, caramel, floral with grassy notes. Still puckeringly sour.

Bottle from LCBO. Pours a deep purple (!) in the glass. This is a beautiful, mouth puckering sour, like a thick & rich sour candy (minus the sugar). Tastes of balsamic vinegar mixed with unsweetened grape kool-aid & sour cherry juice. Really. Decent member of the sour canon.

UPDATED: AUG 28, 2017 dark red color with white small head. retention and lacing are enough. smells cherry, wood and slight vanilla. complex taste is overly sour and overly tart. taste is dominated by sourish cherries and lactic sourness. slight wood and very light caramel are in background. very astringent finish, like a vinegar with some bubbles. not easy to drink this respectable flanders. overly tart and astringent.

Bottle. Pours a dark auburn brown with a good, yellowish-brown head. Aroma is slight cherry, sour, balsamic vinegar. Taste is sour, some red, sour cherry, balsamic vinegar, nicely sour. Tad thin and lively.
