Bottle @ Paters Vaetje, Antwerpen. Hazy medium yellow color with a small, fizzy, fair lacing, mostly lasting, off-white head. Aroma is sour, ripped fruit, lemon crispy. Flavor is moderate sweet and acidic with a long duration and a nice dry finish. Body is light to medium, texture is watery, carbonation is flat, finish feel is light astringent. The aroma is sweet and sour with notes of metal, the sourness coming from the wild fermentation and the sweetness from the malt - a very inviting aroma. The color is orange and it has a fantastic head, and is very lively. The flavor is sweet, metallic, bitter, and bitter. It starts out as a sour orange, but then a the flavor of grapefruit takes over and lingers thru to the end. Bottled. Hazy nutbrown colour, not much head, but a bit white foam. Very sour aroma and flavour. My first thought when having this was that unless knowing what I drink I would have guessed for a Cantillon. Very pleasant, refreshing and smooth lambic.

2005 Bottle. Very hazy amber beer. Thick bubbly white head. Nose of sherbet and wet dog! Crisp palate, dry. An approachable gueuze, not too acidic. Just a little lemon and wood. Bare whisper of hop. Finishes dry. Not too bad.
A traditional bottle-conditioned gueuze, spontaneously fermented, and a step above the regular Boon gueuze, which is most likely sweetened and not conditioned. Citrus flavors with moderate sourness and a dry, bitter finish. Ages well.
