COMMERCIAL DESCRIPTION
Based loosely on the Smokestack Series’ The Sixth Glass, this abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the “angel’s share” of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes coming to the fore.

Blood tinged with a rusty scent, boozy, chocolate with a whiff of cooked down cherries. A surpring light palate carries intense maple and cherry, faint reminders of yeast and walnuts. Awesome stuff.

2015 edition. Best before 30/09/2017. Pours a cloudy deep amber colour with a warm cap, decent retention with some mild creamy lacing. Lots of particles of different sizes running through it. Very sweet aromas with many dark fruits (raisins, plums, dates), caramel, toffee, burnt sugars and some spices. The taste is sweet, but not as rich as expected which makes it easier to drink. Still the dark fruits, caramel with some hints of molasses. A slight dry finish. Goes down very easily. A little too rich to have a big bottle though.

Dark ruddy brown pour with a tall, creamy to chunky beige head that has good retention. Aroma of dark fruit, bourbon, cherries, turbinado sugar, fresh baked whole grain bread, light nutty and chocolate notes and some tough to pin down, kinda sharp fruity esters. Flavor is caramel, toffee, bourbon (more woody than anything), and dark sugar up front; then licorice, cooked apples and stone fruit, hay, hints of cocoa nibs, slightly tart, mellow cherries, some spicy, lightly peppery and bready yeast notes round out the finish. Bourbon cherries and stone fruit linger for a while. Heavy body, chewy, but somewhat creamy feel, medium, blanketing and fairly sharp carbonation. I really like this beer, everything just works together. It would be a perfect cold weather sipper with, or without a nice mellow cigar.

Bottle from LCBO.. Caramel, marshmallow, bourbon aroma. Same notes in the taste with some spice. Not all that boozy. Really good.

Aroma of Belgian phenols, toffee and plum/raisins. Slight alcohol whiff. Appearance is fairly clear copper with white head and beautiful Belgian lacing. Flavor is dark stone fruit. Plums. Raisins. Dried cherries. Alcohol. Bourbon. Mouthfeel - full body, medium high carbonation. Sweetness in the finish. Overall an excellent Belgian quad. A four-pack of 12-ounce bottles purchased at Sebastian (Fla.) Discount Beverage while visiting my snowbird parents; FYI, in a virtual interesting-beer wasteland, this small place was a good find. Pours into a snifter a cloudy amber color, leaving behind a small off-white head. Aroma is pretty much as the packaging says it will be: bourbon, wood, vanilla beans. The flavor is more complex; I taste plums, dates, figs, raisins, prunes, cherries, toffee (as it warms, the flavor kicks up -- not surprising). It has a medium body with a creamy mouthfeel. This is a very good Americanized Beligan quad from a consistently good brewery nearly dead-smack in the middle of the U.S.
