COMMERCIAL DESCRIPTION
Based loosely on the Smokestack Series’ The Sixth Glass, this abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the “angel’s share” of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes coming to the fore.

A 2011 bottle. It pours a medium-dark amber with a short tan head and lacing. The aroma has lots of strong cherry notes with a little bit of bourbon. The flavor is close to a typical quad up front, with dark malts and Belgian yeast notes, but tart cherries and bourbon quickly show up, all over a medium body. ---Rated via Beer Buddy for iPhone

12 oz. bottle. Pour was light brown with a large foamy off white head. Lots of floaties held in suspension, as if they were in a jello. Aroma of bourbon, brown sugar, spice, raisin, fig. Taste was light sweet, bourbon, plum, cherry liquor.

Refrigerated 75 cl brown bottle poured into a cup. Hazy medium brown with small beige head. Aroma is bourbon, medium body, medium carbonation, and small-bubble lacing. Taste is bourbon, barrel, and booze.

Poured from bottle. AROMA - bourbon and waffles with maple syrup. APPEARANCE - mahogany with tan head. TASTE - bourbon and oak flavors come through in a big way. Also dark honey, maple syrup, alcohol (glad I shared this), toffee, caramel, butterscotch. PALATE- full, heavy, boozy. OVERALL - I would definitely buy again.

Dark, rusty pour with a tall, beady, smoked ivory pour. Slope-shouldered 11.2 or 12 oz bottle with a decent label. Lambicky, sour, raspberry/cherry aroma with tannins and leather - very nice. Sour raisins and prunes up front, krieky backbeat, leather, dust, hay, wood, vinous, vanilla, toffee. Mouthy, effervescent. Really nice and complex. Market Square Liquors, Timberlane, Tallahassee.

Bottle from Merchants. Aroma is wood, cherry, dark fruit, toffee, caramel, yeast, booze, spice. Appearance is brownish red, fluffy light brown head, unfiltered. Taste is woody cherries, toffee, spices, bourbon, caramel, yeast, maybe a touch of clove, dark fruit, good. Mouthfeel is medium body, a Rochefort 10 amount of carbonation, woody cherry boozy spicy aftertaste. Overall, it's definitely different, but still quite solid.

375ml bottle from Total Wine in Brookfield. Cellar aged 3 months and shared with bananabi11. Served colder than cellar temperature. Hazy reddish amber pour with some floaties. Aroma has cherry, thick yeast, sweet malts, oak, nut. Taste is of sweet malts, a solid yeasty presence, stone fruits, nuts, vanilla. Full bodied. Some alcohol presence. The blend is ok/solid, but doesn't come together great. Finishes sweetly yeasty fruity. Solid/interesting brew. The oak is a player. The yeast/quad was a bit muted. But all didn't come together great. 13.5

Sour cherries and bourbon nose from a cumulus cloud bank generated by the pour from the bottle. Taste is tart, sweet and oaky, all of which last into the finish (though the tartness does have the longest influence). Not a typical quad by any measure but who am I to complain when the results are so darn good.
