Stout au moka

L’Exploité est un stout au moka, robuste et sucré. C’est au XVIIIe siècle que le nom « stout » fait son entrée pour de bon dans l’univers de la bière. Il aurait été utilisé pour identifier les porters plus forts, plus goûteux et souvent plus secs. À cette époque, ces bières noires passablement sucrées et faibles en alcool étaient souvent consommées par les « porteurs » de colis desservant la gare et le port de Londres. C’était les débardeurs du temps. Exploités par les négociants et les importateurs, payés à la pièce, ils travaillaient fort et ne prenaient guère de pause pour manger, préférant boire rapidement une pinte ou deux de bière noire et sucrée et surtout, la moins chère, d’où son appellation bière des porteurs ou, en anglais, porter’s beer. C’est aussi à cette époque que le café et le cacao firent leur entrée en Angleterre et il n’était pas rare que les porteurs aient à en transporter de lourdes poches pour des commerçants qui faisaient fortune à transformer ces grains. Le premier café, de type arabica, provenait presque exclusivement de la ville portuaire de Moka, au Yémen, et avait des arômes subtils de chocolat. Pour reconnaître le travail de ces exploités qui ont transporté des milliers de poches de café sur leur dos courbé, nous en ajoutons à notre stout. Et comme dans certaines régions du monde le mot moka est associé à un mélange de saveurs de café et de chocolat, et que les porteurs ont sûrement dû en transporter nombre de poches aussi, nous ajoutons des fèves de cacao transformées ici même, à Saint-Hyacinthe. Cette bière contient aussi un peu de lactose. L’Exploité offre des notes suaves de torréfactions complexes allant des noix grillées au caramel brûlé, en passant par le café moka et le chocolat doux. L’amertume et la pointe d’alcool sont enrobées des sucres résiduels, ce qui équilibre et adoucit les saveurs en bouche.

L’Exploité is a mellow and sweet moka stout. The word “stout” first emerged during the 18th century, apparently used to differentiate stronger porters that were typically tastier and drier than usual. During this period, semi-sweet and low alcohol dark beers were often consumed by Londons dock workers, who were also known as “Porters.” Exploited by merchants and importers, paid per unit carried, Porters worked hard, barely stopping to have a full meal, preferring instead to drink a sweet, low alcohol beer, often the cheapest one, which came to be known “Porter’s beer”. Coffee and cocoa beans began appearing in England during this era. Porters frequently had to carry heavy bags of these products for merchants who were making a fortune processing these beans. The first coffee, an arabica variety, was primarily imported from the port city of Mocha in Yemen and had a subtle cocoa aroma. In tribute to these exploited porters who carried thousands of coffee bags on their broken backs, coffee was included in this beer. As in many parts of the world, the word mocha is associated with a flavor combination of coffee and chocolate, so we added some locally processed cocoa beans as well, since porters must have surely carried their share of these cocoa bean bags too. A bit of lactose and a touch of vanilla have also been added to complement these flavours. L’Exploité presents mellow and complex notes of torrefaction ranging from roasted nuts to burnt caramel, incorporating Mocha coffee and sweet dark chocolate. The low bitterness and alcohol bite are wrapped in the residual sugars, which balances and smoothes the flavors in your mouth.

341ml bottle (thx, JC!). Bottled in March 2017. Pours an almost black with a huge dark beige head. The first nose is iron notes, further fruity, roasted malt, chocolatey. Taste is roasted malt, dark fruits, some chocolate and smokey notes with... LOTS OF IRON on the background. Damn. This is beer is an almost iron bomb. It went to the sink as I just hate iron :-(

Opaque colour, firm coffee head. Aroma has coffee, dark chocolate and earthyness. When gets air, earthyness leaves. Medium-bodied. Starts sweetish with evident lactose and vanilla. Dark chocolate and coffee plus some more unpleasant harshness. It is almost good beer but a bit too restless.

341ml bottle. Jet black colour with average to huge, frothy, moderately lasting, minimally lacing, tan head. Chocolately, slightly roasty and nuttily, dark malty aroma, notes of mocha, dark chocolate, hints of caramel. Taste is roasty dark malty, chocolately, minimally ashy, moderately bitter hoppy, notes of dark chocolate, mocha, sweet-ish undertones of caramel, treacle, tar, a nuttily touch. Well constructed relation of tension and interplay between bitter- and sweetness.

Bottle, 341mL. Home. A sparkling dark brown beer with a big beige foamy head ; good retention. Roast, toast, black chocolate, coffee, light vanilla, herbal note. Light sweet, medium dry lasting bitter refreshing, light warming. Good body, medium oily texture, soft carbonation, chocolate bitter dry finish. Overall, delicious ! Gourmet-beer :)

Versa nel bicchiere di colore marrone, molto scuro; sormontata da una maestosa schiuma di color moka, cremosa e persistente. L’aroma è abbastanza dolce, con note tostate a bilanciare; si avvertono distintamente anche cioccolato, caffè, liquirizia, luppolo e note terrose. Al palato, caffè e malti tostati dominano la tavolozza dei sapori, ma sentori di vaniglia aggiungono morbidezza e rotondità alla bevuta. La birra ha anche un buon equilibrio tra l’amaro del caffè e, il dolce della moka e del cacao. In bocca è cremosa e si beve molto bene, potrebbe anche essere una birra da tutti i giorni grazie al suo lato liscio e dolce. Una finale leggermente tostato, ricorda un caffè moka.

Pitch black, good macropore foamy tan head, recedes very slowly, light lacing; roasted malts nose, aroma dark malts, roasted, chocolate, caramel, light vanilla; smooth taste, light heavy sweet, slightly bitter, roasted malts, chocolate, mocha, caramel, brown sugar, touch of alcohol; sweet and slightly bitter aftertaste, chocolate, coffee and mocha, roasty – but not sharp – till the end; medium body, oily texture, average carbonation; well-balanced, rich and tasty, very good.

12oz bottle. Pours very deep brown with half a finger of tan head. Full on mocha coffee dark chocolate notes; some may find it overpowering, but I love it. Rich sweetness with a malty backbone. Velvety. Gorgeous stout.

Pours deep dark ruby red, almost black color with a large beige head. Chocolaty aroma with cocoa and malt bitterness, subtle coffee notes, mild hops and roasted notes. Flavor is bitter malty, very roasty, subtle syrupy sweetness, caramel and chocolate, finish is licorice and coffee. Dry yet sweet, carbonation is tad strong but fits here nicely, quite interesting and flavorful.
