Brekeriet White Label
Brekeriet Cassis is a sour ale mainly fermented with Brettanomyces yeast. Black currant is added during the secondary fermentation and this yeast loves berries which is shown in the fantastic taste of the beer. Brekeriet Cassis is refermented in the bottle which gives a thin layer of yeast at the bottom of the bottle.

Little cloudy deep red to purple beer, small pinkish head, little stable, non adhesive. Aroma: lots of black currants, some chlorine, fruity, tannins, peel. MF: ok carbon, medium body. Taste: very sour, lemony, funky, refreshing, lots of sour red berries, red currants, fruity, some chlorine. Aftertaste: sour, lemony, some vinegar, dry, red berries.

Bottle: Thanks to Hackobock: Bottle # 392/552: Served in a Chouffe glass: Medium sized bit lively pink head. Pink ish red hazy body. Aromas of wild yeast, manure, cabbage, rose flowers, some red fruit, hint of berries and some cassis. Flavours of berries, grapes, raspberry, tart, wild yeast, wood, some manure, some hay, some funk, dry and light bitter. Aftertaste is tart, fruity, cassis, berries, dry and some wood. Low to medium carbo, sparkling tart mouthfeel, medium bodied and a tart dry texture.

Elegant ren arom av vinbär och hallon mot en vinös träfatsbotten. Djupt rubinröd färg och ett kort skum som lämnar en tunn varaktig hinna. En syrligt bärig smak med viss kärvhet. Tunn kropp men välbalanserad kolsyra. En fint avrundad torr eftersmak. Väl genomfört men tyvärr ganska ointressant karaktär.

Semi-clear red with a pink head. Aroma is lots of berries, some cherries, black currant, hints of wood, some yeasty notes. Taste is sour, fruity, slightly citrusy, berries, currant. Light-medium body, medium carbonation, tart. Yummy!

Burgundy color with purple head. Aroma is very rich and fruity, with blackcurrants, bitter dark cherries and blackberries. Taste starts sour and fruity up-front, not much complexity but really intense on the dark fruits. It’s like a fruit lambic without the funky notes. It’s really nice overall, clean sourness and lots of fruits.

(750ml batch #14 bottle @ VilleValla Pub, Linköping, Oct 13 2015) Pours very hazy deep burgundy with a moderate, lasting medium pink head and some lace. Aroma has obvious black currant/cassis core, a bit tannic, some sour black cherry, musty notes with light Brett funk, touch of oak and oxidation and a bit of lacto as well. On the palate it’s again led by jammy cassis with a bit of dark cherry and blueberry, light lemony lacto sourness, oak, musty but not really funky, touch herbal. Finish is fairly soft and round, lacto, black currant tartness, no real aggressive sourness or funk. Light to medium body with farly soft carbonation. Fruit extraction is really nice here, it’s like a cassis lambic without the aggressive funk profile. If anything a little mild as a result, but it’s elegant and I like it!

Bottle at Churchkey. Pretty deep reddish color, off white edge head. Earthy tart berry aroma. Taste is very fruity and lightly tart cranberry. Delicious.
