Bottle. The brett yeast truly dominantes this beer. Its crisp, citrusy and funky with a dry finish. Overall a bit too yeast dominanted and therfore one dimensional, altough refreshing.

Bottle sample at a tasting. Thanks Yoav. Hazy orange with a huge head. Smell of Brett, overripe fruits and spices. Sweetish, spicy, earthy bitterness, tropical fruits. Medium-bodied, smooth.

At a tasting, thanks, small stable creamy head, cloudy murky palish orange color, aroma of peach, plum and spicy hints, yeasty nutty flavor, a bit coarse bitterness, just a bit unbalanced. Drinkable but not too great.

Bottle sample at a tasting at Yoav’s place. Thanks Yoav. Hazy orange with white head. Spicy aroma with notes of funk, brett, candy, ripe fruits, perfumed. Sweetish flavor with notes of funk, candy, flowers and herbs, bitterish. Lively carbonation, medium-bodied.

Clear deep golden hue under a thick foamy white head. Funky bretty nose with a wallop of yeasty bread dough. Crisp dry flavor with a farmhousey funky bretty flavor with lots of fresh doughy yeast tones and light grassy hop bitterness and a light funky earthy finish.

Cloudy, dark golden pour with thick, white, fine foam. Lots of mustiness in the nose with a good dose of tart. Floral and earthy touches as well. Strong yeast tang in the flavor with the brett and saccharo yeasts combining well. I think the brett comes out on top, but it does not overshadow. There is a hops presence, but it is muted and on the floral end. It is most present, I think in the bitter finish. The smooth cereal malt and malted wheat come through at toward the middle and end, but the final flavor is a sour hop note. Medium body with lots of carbonation, and a slight slipperiness. It is a sweeter saison, largely thanks to the two malts. Traces of the mineral flavors, but comparatively mild.

Bottle sample at a tasting at Max’ place. Thanks Stas & Max. Hazy blond with a big foamy head. Funky, smoked Georgian cheese and some spruce in the nose, a little bit of olive oil, a little spicy-oregano and some funk in the mouth. Light body, smooth texture, spicy-slightly bitter finish.

Today I’m trying my first beer from Brekeriet. It’s a Swedish brewery from 2012 who only brew with wild yeast. I’ve found myself this bottle of Funk Starter; a Farmhouse ale brewed with Brettanomyces. It’s coming in at 5.5% ABV. It pours a slightly hazy golden colored body with a fizzy head that disappates quickly. It has a very funky and peppery aroma with some fruity notes too. A bit of spice and bread as well. It smells like a watered down saison. All the classic saison flavors are present but toned way way down. The taste is light and a slightly sour. There’s some definite notes of funk, citrus and spice. It is really light though. The most dominant flavor is the funky yeast. The sourness comes through a little better in the aftertaste, but vaguely. I guess the name suggest that it’s a starting beer for people who’s just been introduced to brett. I’m a little disappointed to be honest. It’s not a bad beer in any way – it just doesn’t have that funky and sour kick that makes it memorable. It’s refreshing and goes down super fast. A sixer of these on a hot day surely wont hurt anybody.

330ml bottle. Pours a hazy gold, medium white head. Moderately sweet floral saison aroma. Taste is crisp funk, soft brett, lightly spicy saison sweetness. Fairly light in character, but super refreshing.
