Escoffier is our much heralded collaboration with New Belgium Brewing in Ft. Collins, CO. Coinciding with their entry into Michigan in August 2012, this project began with a friendly meeting at our pub. After a few beers and some food, the idea to brew a beer together started to take shape. Surprise!

Auguste Escoffier is considered the master chef of the 20th century. His ideas and methods left an indellible imprint on the culinary world, and are still in use to this very day. We named our beer Escoffier to celebrate the relationship between great food and excellent beer, and how they elevate each other when enjoyed together. If youve ever visited our pub, this is the cornerstone of what we try to accomplish.

Will we make it again? Only the ghost of old Escoffier knows.

Pours reddish copper with a modest beige head and a sour fruit aroma. There is a medium-bodied light malt flavor with brett-fueled sourness that is substantial but not overwhelming. A dry fruity finish.

16oz can. Pours a clear copper orange color with a small white head. Aroma has a sour, light vinegar smell with sweet undertones. Taste is light and clean, with a slightly sour floral taste.

Can shared by Ken at Capitol Beer. Pours amber with little head. Nice sour fruit aroma. Near med body. Flavor is sour, berry, malty. Not extreme, but very tasty. Nice, pleasant, moderately sour finish.

16 oz. can shared by Keir- thanks again, Keir! Wow, wide range of experiences on this one. I didnt know anything about the brewery or beer going into it. Pours a clear golden color with a small eggshell white head. Aroma of peach, apricot, sugar, bretty funk, and earth. Flavor of the same fruits and funk as the nose, with sweet caramel malts and just a little metal. Light-medium bodied, with low carbonation and a fruity, sweet mouthfeel. Good sour.

The pour is a deep orange with a red hue. The aroma shares that of a light sour. The taste for sure has characteristics of a sour, but not overpowering. A decent beverage, even for someone that really isnt into sours.

16oz can, thanks to Aaron for this. Clear orangered color. Ample khaki heads, leaves little loose lace. Fizzes away to a ring and a web. Bigger body. Medium, but smooth carbonation. More on the dry side, overall. Moderate sour taste, little alcohol bite. Light herbal hop aroma, light caramel malt. Kind of bready. All that is hard to taste amongst the sour. Nice one to enjoy with my sandwich, though.

Big thanks to Gtg642 for this one. Served in a mini tumbler. Pours clear golden with a short fleeting head. Nose is earthy and fruity. Background funk. Flavor has nice Brett plus tropical and citrus fruits. Dry and moderately funky. Some citrus rind and light black pepper in the nose as it warms. Reminds me of the character from the White Labs Brett Trois strain. Goes down quite well. Quite nice.

UPDATED: MAR 27, 2013 On tap at the brewery. Honey gold in color. An understated aroma, and flavor, that is yeasty and enjoyably floral, but the bretts sourness only barely comes through. A wine mouthfeel! Overall, very much appreciable, but certainly understated.
