Chef Floyd Cardoz and brewmaster Garrett Oliver have combined their inspirations to bring you Brooklyn Cuve de Cardoz. This golden wheat beer starts with a base of malted barley and unmalted wheat and then builds upon it a delicate balance of exotic spices selected by Chef Cardoz and then toasted and ground in the kitchens at Tabla. Ginger, tamarind, mace, black pepper, coriander, fennel, fenugreek, cinnamon, cloves, nutmeg, and chilies are added in the kettle, and then the beer is infused with toasted coconut after the fermentation. Combined with our yeast and light hopping, these spices give the beer a gentle, complex perfume, a full fruity palate, and long, drying finish with a very faint prickle of heat.

Draft - Very pale golden body with a huge white head; Excellent deep very spicy but super excellent nose; Very refreshing body with a very soft fresh carbonation, the spices add a lot; Long fresh finish, lots of aroma both light hoppy and again lots and lots of spices, Very refreshing and very drinkable.

From notes Brooklyn @ Sierra. Really strange offering. Pours a deeper golden color, white head, decent retention. Spices galore in the nose, earthy, vegetal, some citrus. Palate is just as confusing, the spices dominate with a slight bitterness in the end. Just not working for me.

Bottle at the Funky 6. Pours straw gold, semi-hazed with a medium, white head. Dynamic aroma, spicy and floral, with hints of ginger and pepper. Flavor is fairly sweet, with interesting spices, citrus and moderate bitterness. Medium in body with fine to average carbonation. Dries up slightly in the finish, with crisp and lightly resinous hops, and ginger cutting through a good bit. A very nice beer and the unique ingredients work well.

Pours a pale clear golden. Sweet with floral aromas. Some dryness. Belgian wit yeast aromas. Also aromas of peach and alcohol. Dry finish. Hints of sweet white wine.

I saw tepid, hazy yellow. I smelled heavy lemon sweetness, yeast, and light spice. I tasted bubblegum and alcohol. In between I discussed the finer points of engaging students in authentic science, hence the shitty notes.

Tap at CBF2009. Pale golden, low white head. Fairly spicy nose: Tamarind, coriander noticable. Spices are interresting, light proper burn towards the end. Medium to light body, a bit sparkly. Spices retronasal. Interesting broad flavor which keeps on comming.

Tap at Barcade. Pours a light golden amber. Nose is spicy with spearmint notes and light peppers an more. Flavor follows that. Nicely carbonates with lively little bubbles. Its an odd combination of spices which gives this a very exotique flavor. Finish is bright and lively with spice and sweet malt notes. Very interesting.

Bottle (unlabeled Brooklyn 750mL). Aroma is unbelievably complex, led by a musky-fruitiness, notably pineapple and oranges. The spices are very much subdued but undeniably present. I can pick out clove, black pepper, coriander, and ginger. Pours a cloudy pale yellow with great lacing from a thin but steady white head. Flavor is balanced and enjoyable if less complex than expected from the nose. Fruit up front with spice interlaced, leading to a bone dry finish with strong notes of cinnamon and nutmeg.

Cloudy gold pour, whitish head. Damn bizarre aroma. Name the spice its there. Too much going on. Sweet spices, chiles, pepper...just odd. And I think the coconut addition was a mistake. Flavor is also weird as hell. Its a bit dry, spicy, tart, sweet...damn this stuff is all over the place. Friggin odd.
