We spend a lot of time with our pals in the cocktail world, and they are constantly putting new flavor combinations in front of us. One of my favorites is a Scotch-based cocktail called The Penicillin. Invented by bartender Sam Ross at Sasha Petraskes famous NYC cocktail bar Milk & Honey, the Pencillin is an instant classic. It combines peaty Scotch, ginger-infused honey, and lemon juice. Its an improbable blend, but its delicious, and its also the inspiration for our next Brewmasters Reserve beer, The Tonic. The government wouldnt let us call the beer Penicillin, were afraid. But friends, between you and us, this brand new Tonic will cure many of your ills. Now take your Tonic and text us tomorrow.

Tap. Hazy muddy orange, thin white head. Herbal, sweet, light fruits, sweet flavors and aromas. Boozy tea like qualities. Ick. Dominated by the ginger and not in a good way.

Draft from notes. Pours a slightly hazy dark golden/amber color with a small off white head. The aroma and flavor have an interesting combo of sweet malts, honey, ginger, spices, some peaty smoke and lemon citrus, when offered originally the category was misleading, interesting beer though.

Draught. Copper colour with some hazy, small head. Aroma is spices, citrus, tea and some herbs. Flavour is mild peated notes, some tea as well as herbs, caramel, spices, wood and toffee. A bit strange, but still drinkable.

The beer has a heavy drak copper color to it, no lights passes through it and the beer has very little head that quickly dissapates and very little lacing. The beer smells interesting a mild scent of ginger, honey, and mild hoppiness. The combination almost cancels each other out but there is a lot going on. The taste is great with a definite ginger, honey flavor to it...its almost seems mild but there is actually a lot of flavor to it. The mouthfeel is clean with a mild ginger flavor and bitterness to it, decently carbonated. Overall, I had to order a second one just to see how I felt about it...it definitely is a concoction. Weird yet Wild Stuff.

On tap at 2SP. Pours a slightly hazy golden yellow color with a small one finger off-white head. Smell is spices and honey, a little lemony citrus, and a hint of smoke. Taste is lemon and ginger that really stand out with hints of smoke and a honey-like finish. Slightly medicinal. Medium body and moderate carbonation.

The aroma of this slightly cloudy, soft bronze-straw colored beer hints at the presence of ginger, along with a bit of citrus and maybe a hint of smoked peat as it warms up. Its a refreshing, effervescent beer, with no one characteristic dominating over the other. Yes, you can definitely taste some ginger. You definitely get the citrus. And if your palate is fine tuned, you even can sense the peat smoked malt smokiness, just slightly, in the finish. But all these elements are simply compliments to a substantial base beer that has the feel of a Saison or Wit, though there is no wheat malt in the recipe (English Peat Smoked Malt, English Pale Malt, German Pilsner Malt). The citrus (dried lemon peel, organic lemon juice imported from Sicily), minced ginger, New York State wildflower honey, as well as the light body, effervescence and near 8% a.b.v. all work in supreme harmony, combining to build the perfect sipping beer for our sure-to-be long, hot New York City summer.

Barcade, Philadelphia tap ($6): Pours a copper/brown colour with a small head. Aroma is like tea and herbs and ginger and stuff. Taste reminds me a little bit of DFH Sahtea. Kind of soda like taste. Tea-like quality with a hit of ginger. Kind of weird. Some lemony quality. Not terrible.

Tap at BP Dupont Circle. Unfiltered orange-tan. Steady white head. Straight up fruity ginger beer, sweet, not sharp or bitter. Lemon juice, dulled out, not so great. Very ginger dominate. Drinkable, but not impressive.

Very unique. Nice pour, interesting taste and aroma with the peat and malt. The lemon/lemongrass/honey is very present. For what it is, it does a good job. A unique, ambitious beer and good for Brooklyn for making a beer that resembles a mixed drink.

On draught at Barley Hopsters. The beer pours a clear golden-orange color with a medium off-white head that recedes steadily. Partial rings of lacing on the glass. Aroma of smoked malt and tropical fruit. Medium body with a peat and smoke character with notes of bready malt, lemon verbena and herbs. The finish is fruity with a charred wood aftertaste. Good flavors independently but they dont work very well together. Barely average overall.
