Saixon is a saison - not a typo. But it’s different. The saison style traces its origin back to Wallonia, the predominantly French-speaking (and bordering) region of Belgium. We asked ourselves what the style would be like if the pendulum swung East and took root closer to the German border of Belgium. And then we brewed it. Presupposition meets new inspiration in this Belgo-German hybrid. In addition to the dry, crisp and funky notes you’d associate with the classic saison style - and the wildly traditional use of Brettanomyces, Saixon also features three generations of German hops: old school (Hallertau Mittlefruh), second wave (Opal), and new school (Mandarina Bavaria and Hallertau Blanc). I really enjoyed this. First time I've said that on a Bruery beer in a little while.. The flavor was effervescent but easy and light. Nice stuff.

Bottle dated 3/28/16, a bot over a year old. Pours hazy straw color with a soapy, 2-finger white head. Aroma mixes notes of lemon and Brett sourness. Body is light with a touch of oil. Dry finish. Earthy flavor with just a touch of yeast funk. Mild notes of lemon and grapefruit at the back.

Huge amount of Brett refermentation leads to a big, foamy, white head that settles out surprisingly small and with lower retention than expected. Clear orange-golden with a hint of haze from the vigorous upswing of carbonation upon opening.
Massive, over-worked Brett in the nose with bread, white pepper, guava, papaya and other notes associated with it. It's got a bit of light bile-like character, too much clove and tons of bread. Hops are completely faded and would be hard to imagine ever manifested much given the complete Brett dominance here. Biscuity, bready malts behind it are sparse while some cidery/apple character lingers as well as more white pepper-like phenol.
In the mouth it's lightly acidic, jam-packed with tons of brett but has too much clove, white pepper, banana and cidery apple character past the basic lime and light band-aid base qualities of the Brett. Carbonation is a bit high, but not lasting, leaving a rather loose finish with light honey and mango notes lingering. Beer is kind of a mess and all over the place and there is way too much unwanted phenol/ester here, despite some of the good stuff being in there too.

Hazy, light gold pour with a tall, fluffy, to chunky off white head. Aroma is cereal, toast, funk, stone fruit, tart, earthy apple, mineral, light basement. Flavor is sharp stone and tree fruit, sharp doughy yeast, toast, cereal, a bit of toffee, spicy citrus hops and a bit of grass. Light to medium body, neutral entry, but explosive, heavy carbonation. Nice, moderately funky and acidic.

Sample at Kurtkeller 026: Summer-tastic 01 on 06/25/2017. Cloudy yellow-gold color with a medium white head that diminishes gradually to an outer ring. Partial rings of lacing on the glass. Aroma of funky yeast, hops and malt. Medium body with flavors of peppery yeast, funky citrus, floral hops and malt. The finish is fruity with a yeast and hops aftertaste. Pretty good overall.

750 ml bottle thanks AdamChandler on this Membership tick! Clear is not the right color, hazy gold. Aroma shows me huge amounts of Brettanomyces, light fruit. Mild fruited nuanced. Shit tons of Brett. Super bone dry texture. Maybe fresher with hops would make this more pleasant.

75CL via Hoarders. great clarity. yellow, really frothy head. wow. the aroma is bit like sniffing nitrogen, grapes, barrel and mango. very dry. wow delicious. euro - hop bitterness, pine, wheat, oak, grass, hay, lemon, orange. delicious.

750ml bottle. Poured a golden color with a white head. Funky, bread, brett, floral, and some citrus.

JaBier (8518) - Capital City, Ohio, USA - JUN 3, 2017
Bottle. Clear orange pour with a thick white head. Aroma of malt, funk and grassy hops. Malt and orange flavor with saison yeast esters before a noble hop finish. Interesting concept and turned out pretty well.

thegreenrooster (4700) - St.louis, Missouri, USA - APR 1, 2017
Pour is a hazy straw yellow color with a huge white head. Aroma is a nice hit of the funky brett with some lemon juice. Flavor is some juicy citrus flesh with a bit of green hop and a sweet berry. After the swallow I get more of a white wine and then a dry super brett finish. Nothing wrong with this saison. Plenty of flavorful sips.
