COMMERCIAL DESCRIPTION
Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bière". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

Bottle from Beergium. Amber color, white head. Bitter taste with citrus, earthy notes, tart, spices, sour apple, grass and oak. Bitter finish with citrus, earthy notes, tart, hops, sour apple, oak and grass. Excellent saison.

Hazy peach pour with a tall, creamy, off white head. Aroma is tart stone fruit, green wood tart, cereal, a hint of caramel, earthy spice, and a hint of oaky wood notes, a bit light on the vanilla side of that though. Flavor is cereal, caramel, earth and woody spice, tart stone fruit, earthy funk, wet basement, toast, and some nice oaky notes with a little more vanilla than the aroma. Medium body, dry, dry, acidic feel throughout with a slight boozy slickness and a hugely heavy, sharp and blanketing carbonation. Good stuff, tart, funky and fairly complex. Definitely over carbonated, but it’s two years old so I’m guessing it was still just a bit more sweet when it was bottled.

Shared bottle. Aroma: Funky, fruity, phenolic, wild. Appearance: Pours hazy golden with nice head. Taste: Bit alcoholic, fruity, phenolic, wild, bit of sweetness, oak, bit of tannic or phenolic bitterness. Palate: Dry finish, medium to low body, medium carbonation.

(Bruery Terreux Tonnellerie Rue) Bottle 750 ml at home, served into a big tulip, ABV 8.5%. Deep orange colour on the body, clear, with a huge and thick white head on top. Aroma has fruity notes, apricot, wood, unripe grapes. Taste has stone fruits, straw, alcohol, grapes. Medium body. Good.

KRS 181116. Golden color with a white head. Aroma is spices, yeast, fruit, floral, herbs. Flavor is spices, yeast, tangerine, sourness, fruit, floral, herbs, farmhouse, funk, hop. Easy drinkable nice beer.

Unclear medium orange yellow color with a large, frothy - creamy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, tart, moderate yeasty, funky, fruity, wood, citrus. Flavor is moderate sweet and light acidic with a long duration, tart, wood, funky, fruity, citric, peach. Body is medium, texture is oily to watery, carbonation is soft. [20160922]

Aroma of Farmhouse funk, citrus, grains. Appearance is a hazy orange with 2 fingers of white head that retains very well. Taste is orange, goat, banana, earth, minerals and pepper. Palate is medium bodied with a dry and slightly bitter finish. Overall- Quite drinkable and complex, but not as dry as I had hoped.
