Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bire". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

Type: 750ml (25.4-oz.) bottle Glass: Karl Strauss 26th anniversary tulip glass From: Beer Advocates heresy22 Price: N/A Purchased: N/A; Received Aug. 30, 2015 Consumed: Oct 28, 2015 Misc.: Bottled on July 8, 2015; Reviewed as a Saison, not an American Wild Ale (went with The Bruerys website) Thanks Chris! Big time gusher, but I heard that was coming so I was well prepared and salvaged what I could with the foam. Poured a golden, hazy color with 2-to-3 fingers of rocky, foamy, white head, which settled nicely on the top. Light, thin bubble streams on the sides of the glass. Good looking uneven, spiderweb, foamy lacing on the sides of the glass. Great retention. (Sight - 4.25) Smelled tart, lemon zest, light woody notes, brett, citrus, some kind of unknown cheese and bready yeast. Good for a sour Saison. (Smell - 4.25) Taste was a lot different than I thought it would have been. Funky might be the best term. Got woody, oaky notes, brett, sour fruit, earthy rye, dark green apple and bitter dry pear. (Taste - 3.50) Light body. Creamy texture. Lively carbonation. Abrupt, woody finish. (Feel - 3.25) I was probably a tad harsh on this one overall. Luckily Ill have this whole bottle to change my mind. This must get better with age. (Overall - 3.50) 3.70 84 B

Aroma is proprietary yeast, tropical fruit and berry/fruit sweetness. The flavor is pineapple, proprietary yeast, malts, hops and a tangy/tart/bitter finish.

750 from Whole Foods PM. Pours turbid golden with frothy, white head. Nose is tart lactic citrus, grapefruit, tangerine, some yeasty funk, hops. Tastes fruity, citric, somewhat tart, with notes of grapefruit juice, tangerine, resiny hops, some yeasty funk, and a juicy finish.

24 sept 2015, tap at the Bruery. Gold, clear, no bubbles. Nose is rich, spicy, woody. Ned body and moderately fizzy. Really nice. Bitter woody notes, sweet golden syrup, hints of cola or rum. Nice.

On tap @ The Bruery. Clear golden pour with a soapy white head. Interesting character of citrus, oak, and tangy melon. Pretty peppery and spicy, too. A lot of peach and white grape. Lots of spice, eucalyptus, and perhaps coriander? A little bit on the sweet side, particularly on the finish. Definitely some apple peel bitterness as well.
