Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bière". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

Bottle..Pour is clear gold with a large white head. Nose is honey, rustic, biscuit, citrus, spice, grapefruit peel, funky..Taste is grain, funk, spice, honey, citrus, very clean drinking.

Bottle from Total Wine, Sacramento. Pours cloudy golden with a huge off-white head and a sourish fruity aroma. There is a slightly sour light malt flavor with a lot of spiciness and a nice yeast presence. Refreshing.

Citrus and light bretta well balanced and subtle, well done for style and very tempered compared to Bruerys usual stuff. Golden pour with good head. Light tangy finish. Tap at torst.

4 oz pour on draft at Rustico Alexandria. Clear golden yellow with off-white head. Aromas of funk, light Brett, citrus. Tastes of lemon, herbs, Brett, funk. Medium body with a dry finish.

Bottle. Cloudy golden yellow pour with a white head. Aroma is citrus zest, a little yeasty and bready, tart. Flavour is surprisingly dry, citrus zest and spice, bready and yeasty. Very nice saison.

Big time gusher, but I heard that was coming so I was well prepared and salvaged what I could with the foam. Poured a golden, hazy color with 2-to-3 fingers of rocky, foamy, white head, which settled nicely on the top. Light, thin bubble streams on the sides of the glass. Good looking uneven, spiderweb, foamy lacing on the sides of the glass. Great retention. (Sight - 4.25) Smelled tart, lemon zest, light woody notes, brett, citrus, some kind of unknown cheese and bready yeast. Good for a sour Saison. (Smell - 4.25) Taste was a lot different than I thought it would have been. Funky might be the best term. Got woody, oaky notes, brett, sour fruit, earthy rye, dark green apple and bitter dry pear. (Taste - 3.50) Light body. Creamy texture. Lively carbonation. Abrupt, woody finish. (Feel - 3.25) I was probably a tad harsh on this one overall. Luckily I’ll have this whole bottle to change my mind. This must get better with age. (Overall - 3.50) 3.70 84 B

750 from Whole Foods PM. Pours turbid golden with frothy, white head. Nose is tart lactic citrus, grapefruit, tangerine, some yeasty funk, hops. Tastes fruity, citric, somewhat tart, with notes of grapefruit juice, tangerine, resiny hops, some yeasty funk, and a juicy finish.
