Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bire". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

Bottle, shred at the pool party. Extremely lively pour-- all bubbles! Eventually a hazy golden body settles out. Strong citrus and funk aroma, skunky undertones. On the palate there is are spicy and grassy notes too. Pretty gassy still, even after having time to settle. Nice flavours though, nice rustic saison.

WARNING: THIS IS A GUSHER. I have never experienced anything like this bottle. Easily a 2 inch fountain of steady foam for 10 seconds. Lost most of the bottle on the floor. Heres a review of what I was able to capture. Hazy gold with a bright white soapy head that quickly recedes leaving thick, soapy sheets. Hay and funk aromas. Soft with bready caramel, citrus and marshmallow upfront turning to grapefruit pith in the lasting finish. Would have faired better on appearance and palate if it hadnt exploded on me.

Bottled. Pours hazy golden with a small white head. Aroma of grass, citrus, funk, spicy notes and rye. Slightly sweet flavor that ends up dry and tart. Medium bodied, oily texture and average carbonation. A very nice Saison. 🌟🌟🌟🌟

Bottle. Big time gusher on opening. Sigh. Pours quite hazy golden orange, medium white head, creamy and lasting. Aroma is dusty, earthy, Brett, grasses. Flavor is a hint of sweetness, similar hint of tartness, medium funk, earthy, dirty, Brett, lemon, oak tannins. Medium body, nicely carbonated. This turned out much better than I could have hoped given how it started. A bit hot on the finish belies the 8.5% ABV, which it should not have in the first place IMO.

Pours hazy orange with a low white head. Aromas of farmhouse, funk, bretta, tropical fruit jam, honey. Taste earthy and rustic with sweet fruit notes and low bitterness. Mouthfeel is somewhat tart and dry with medium carbonation.

Bottle from craft beer cellar shared with God A: barnyard, citrusy, light oak, spicy, apricot App: clear golden thick white lasting head. Excellent lacing t/p: med body with lightly acidic finish. Moderate high carbonation. O: a really fine beer from the Bruery. The wild yeast isnt too upfront it leaves room to the spiciness of the rye. Good stuff.

Cloudy yellowish gold with a huge white head. Bottle pretty much exploded upon opening so probably only drank about a quarter of the bottle. Nice funk, cheese and citrus combo
