COMMERCIAL DESCRIPTION
Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bière". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

750ml->tulip snifter hybrid. From Dominion Wine & Beer. Gusher. Very hazy gold with huge offwhite head. A: tart and funky citrus, yeast, slight berries, herbs. Nice. T: less tart, less funk, citrus, grains, yeast, coriander. Taste not as good as aroma. Sharp carbonation. OK.

Bottle sample at a tasting, thanks Tom L. Pale hazy yellow with a huge head. Aroma is funky, barnyard and wood. Sweetish-sour flavors, notes of fruits, wood, a bit spicy. Medium bodied, quite dry and fizzy. Good one.

Poured from a 750 ml bottle. Aroma is nice with a light grain note, moderately strong fruit esters and some light citrus note. Light cracker malt notes with some grain and hints of candi sugar. Overripe stone fruit with some pear and hints of red apple. Light citrus and oak notes. Medium light phenolics with lemongrass and coriander. Not an explosive gusher, but a pretty active gusher nonetheless. Pours a hazy pale gold color with a large, thick, pillowy, white head that recedes very slowly. Moderate lacing and faint legs. Flavor is somewhat sweet with a light acidity and crisp, dry finish. Light cracker and grain notes with some candi sugar. Medium bitterness with light oak notes and a hint of alcohol. Moderate fruit esters with stone fruit, pear and hints of red apple. Faint lemon notes. Medium light phenolics with and herbal, earthy character. Mouthfeel is medium bodied with medium carbonation. Low astringency and low, but present alcohol warmth. Overall, a nice saison from the Bruery. A bit higher ABV than I prefer. I would also prefer a bit more citrus and oak and a bit less phenolics. On the whole though, it’s a very nice, well made saison.

Bottle, shred at the pool party. Extremely lively pour-- all bubbles! Eventually a hazy golden body settles out. Strong citrus and funk aroma, skunky undertones. On the palate there is are spicy and grassy notes too. Pretty gassy still, even after having time to settle. Nice flavours though, nice rustic saison.

WARNING: THIS IS A GUSHER. I have never experienced anything like this bottle. Easily a 2 inch fountain of steady foam for 10 seconds. Lost most of the bottle on the floor. Here’s a review of what I was able to capture. Hazy gold with a bright white soapy head that quickly recedes leaving thick, soapy sheets. Hay and funk aromas. Soft with bready caramel, citrus and marshmallow upfront turning to grapefruit pith in the lasting finish. Would have faired better on appearance and palate if it hadn’t exploded on me.
