COMMERCIAL DESCRIPTION
Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bire". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

Draft pour at Fischmans. White head, orange color. Sweet and fruity. Tart. Aroma is lemon and biscuits. Taste is sweet, tart, but can pick up the barrels. Good stuff.

Pours a nice yellow-orange mix with a small foamy head. Aroma is lightly ripened fruit. Taste is dry, with a farmhouse flavor. Hay, dried overripe fruit taste that was funky after the swallow.

A golden sour ale with a thin white head. In aroma, sweet fruity malt with light corky notes, light Brett, light lactic notes, light and complex. In mouth, a nice sweet fruity malt with loads of citrusy hops, tropical fruit, light Brett, light curacao, very nice and, warming. On tap at brewery.

Bottle. Poured hazy golden color with an average frothy white head that was lasting with excellent lacing. Medium to heavy yeast, earthy and citrus aroma. Medium to full body with a smooth texture and soft carbonation. Medium to heavy complex sour & sweet flavor with a medium to heavy sour & sweet finish of moderate to long duration. Solid complex beer.

750ml bottle, from Dutchs. Shared with jstax and phaleslu. Smooth, kind of soft, lighter carbonation. Medium to bigger body. Light dry finish. Nice grapefruit citrus funk. Kind of mild slick, lighter carbonation. Moderate-plus sweet taste, light bitter. Just a touch of tart, but not really sour. Funky but not sour. Hazy golden color. Thin white head. Leaves splotches of lace. Solid, funky saison. Worth $15 though? Im not so sure. Will probably evolve with a touch of age, though.

Bottle: The aroma consists of citrus, apple, brett, light lemon peel, and a hint of oak. It pours a hazy golden-orange with a large white head that eventually settles to a thick film outlined by a thicker ring, There is a good amount of thin webbing left on the sides of the glass. The flavor starts with moderate citrus with orange, tangerine, and light lemon. The finish has light-moderate brett, light florals, and oak. Its light bodied with moderate carbonation.
