Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bière". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

The beer is a yellow orange color, sort of tannish gold. Big white head, lots of foam. It’s very cloudy, completely opaque. Lots of lacing. The aroma has a lot of apricot and grape flavor. Light rye, some earth. Mild acidity and oak. Lots of solidly fruity barrel-aged saison action. Taste starts with some fruity sweetness. Yeasty, dry finish with solid oak. Very mildly sour. Lots of fruit. Creamy feel with some body to it. Quite good. On a separate note, the bottle gushed hugely. Went off like a geyser.

Tap room - Herbal and flowery notes. Clear gold with a decent white head. Sweet, bitter and apple notes. Touch of booze throughout.

Appearance: as soon as I popped the top the beer overflowed with foam, needless to say it pours all foam, the head finally settles out into a small beige one, the beer is a very hazy not quite transparent light gold color Aroma: lemon, bread, banana, egg, Taste: mild golden sweetness followed by hints of rye spice, faint tartness and sourness, almost some lime flavors as well Palate: soft carbonation, light mouthfeel, sour finish Overall: pretty good, drinks like a mild saison, smells good too, easy drinking, no real indication that’s it’s a high abv, wish it wouldn’t overflow as soon as the cap is popped ---Rated via Beer Buddy for iPhone

750ml bottle pours a hazy golden color with a lot of head. Gusher from the bottle. Lots of Belgian yeast and sour apple cider flavor.

Draft pour at Fischmans. White head, orange color. Sweet and fruity. Tart. Aroma is lemon and biscuits. Taste is sweet, tart, but can pick up the barrels. Good stuff.

Pours a nice yellow-orange mix with a small foamy head. Aroma is lightly ripened fruit. Taste is dry, with a farmhouse flavor. Hay, dried overripe fruit taste that was funky after the swallow.

A golden sour ale with a thin white head. In aroma, sweet fruity malt with light corky notes, light Brett, light lactic notes, light and complex. In mouth, a nice sweet fruity malt with loads of citrusy hops, tropical fruit, light Brett, light curacao, very nice and, warming. On tap at brewery.
