COMMERCIAL DESCRIPTION
Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bire". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

[ As Bruery Terreux Tonnellerie Rue ].
Unclear medium orange yellow color with a large, frothy - creamy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, tart, moderate yeasty, funky, fruity, wood, citrus. Flavor is moderate sweet and light acidic with a long duration, tart, wood, funky, fruity, citric, peach. Body is medium, texture is oily to watery, carbonation is soft. [20160922]

Bottle at the Sovereign. Massive gusher, lost 3/4 of the bottle. Cloudy orange yellow color, white head. Aroma of white pepper, raw bread dough, lemon. Taste is bretty, dusty, peppery citrus. Nice stuff, but be very careful.

Bottle, 75cl. A lightly hazy golden colored beer with an orange hue. A nice white head sits on top, leaving lovely lacing. The aroma is of the fruity, funky kind, with canned peaches, orange notes, some pumpkin spice hints, alcohol, white sugar and an earthy touch. Its full-bodied, warming and nicely carbonated. Perhaps a bit warming... The flavor too is fruity and lightly funky, pretty similar to the aroma, with a nice bitterness. Lasting mostly fruity finish, quite warming. Sure a fine brew, but it feels a bit sweet and warming. Absolutely repeatable. 161118

On tap @ The Bruery. Clear golden pour with a soapy white head. Interesting character of citrus, oak, and tangy melon. Pretty peppery and spicy, too. A lot of peach and white grape. Lots of spice, eucalyptus, and perhaps coriander? A little bit on the sweet side, particularly on the finish. Definitely some apple peel bitterness as well.

Bottle shared @ Borefts Pre-tasting. Slightly unclear yellow color, average to decent sized white head. Smell and taste malts, wheat, tart, yeast, light funk, light bitterness and even a hint of sweetish floral blossomy notes as well. Decent body and carbonation. Quite interesting.

Capped 750 from ? Pours a monstrous gusher that emptied 1/3 of the bottle. It pours very hazy gold with a fizzy white head. Aroma is rye/citrus/earth and something "wild". Med body or better. Flavor is woody, rye, earth, citrus and something wild, tho its not extreme. This must be a "unique" ale.
