COMMERCIAL DESCRIPTION
Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bière". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

Cloudy yellowish gold with a huge white head. Bottle pretty much exploded upon opening so probably only drank about a quarter of the bottle. Nice funk, cheese and citrus combo

750 ml bottle into tulip glass, bottled on 7/29/2015. Light-moderate gusher upon opening. Pours slightly hazy/cloudy golden yellow color with a 2 finger dense and rocky white head with fantastic retention, that reduces to a nice cap that lasts. Great dense soapy lacing clings around the glass, with a good amount of streaming carbonation retaining the head. Incredible appearance. Aromas of big lightly tart lemon, lime, pineapple, pear, apricot, white wine, peppercorn, wheat, rye bread, hay, straw, grass, oak, light leather/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast and moderate bready malt notes; with great strength. Taste of big lightly tart lemon, lime, pineapple, pear, apricot, white wine, peppercorn, wheat, rye bread, hay, straw, grass, oak, light leather/musty funk, and yeast earthiness. Moderate amount yeast/oak spiciness and slight fruity tartness on the finish; with lingering notes of lemon, lime, pineapple, pear, apricot, white wine, peppercorn, wheat, rye bread, hay, straw, grass, and yeast/oak earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/funky/spicy yeast and moderate bready malt flavors; with a great malt/spiciness balance and zero cloying flavors after the finish. Nice light-moderate dryness from spiciness as well. Medium-high carbonation and medium body; with a very smooth and lightly creamy/bready mouthfeel that is great. Alcohol is very well hidden with only a slight warmth lingering after the finish. Overall this is a fantastic wild saison style! All around awesome complexity, robustness, and balance of fruity/funky/spicy yeast and moderate bready malt flavors; and very smooth and easy to drink for the ABV. A highly enjoyable offering.

A golden sour ale with a thin white head. In aroma, sweet fruity malt with light corky notes, light Brett, light lactic notes, light and complex. In mouth, a nice sweet fruity malt with loads of citrusy hops, tropical fruit, light Brett, light curacao, very nice and, warming. On tap at brewery.

Bottle from craft beer cellar shared with God A: barnyard, citrusy, light oak, spicy, apricot App: clear golden thick white lasting head. Excellent lacing t/p: med body with lightly acidic finish. Moderate high carbonation. O: a really fine beer from the Bruery. The wild yeast isn’t too upfront it leaves room to the spiciness of the rye. Good stuff.

Rating #2293 - New Year’s Eve 2015. Pours a hazy straw colour with a frothy white head and lots of lace. Aroma is of brett, pepper, citrus, soft fruits Clean mouthfeel, medium carbonation, mild alcohol warmth. Taste is a crisp sweetness, tempered with herbal notes, mild pepperiness from the rye, mild sourness from the yeast. Great saison
