COMMERCIAL DESCRIPTION
Originally, the farmhouse brewers of Wallonia would produce a weak Saison beer for the workers and a stronger beer to be aged & sometimes blended – destined for the local taverns. This beer has a primary fermentation with a Saison yeast, then undergoes a secondary fermentation with a blend of Lactobacillus & Brettanomyces. The result is tart, crisp, slightly sour & incredibly refreshing.

330ml bottle. Cloudy, amber colour with small to average, thick, frothy, fairly lasting, minimally lacing, white head. Funky, bretty aroma, hints of bubblegum and, fruity notes of apricot and unripe peach, a touch of brine. Taste is dry, tart, fruity, minimally bretty, notes of unripe peach, apricot, mirabelle, some quince, a touch of bubblegum, firm malt backing.

February 2017 - 330ml bottle at home in Richmond as ’Burning Sky Saison à la Provision’, 6.7%, aged on oak with lactobacillus and brett, bottled Feb 2016, slight gush. Pours hazy golden, lightly sparkling with a foamy off-white head which leaves full lacing. Aroma is chalky, lightly floral, soft grapefruit citrus and paper. Body is frothy, soft to tingly carbonation. Taste is chalky and spicy, white pepper and stones, talc and dry floral notes, dried apple peel and a touch woody in the finish. Pretty drinkable with some complexity. Decent.

Keg Third of a Pint at BrewDog, Shepherds Bush, London in Jan 2016 - Hazy Yellow in colour. Average creamy off-white head. Good lacing. Yeasty; brett, funk, farmyard. Fruity; grapefruit and tangerine citrus. Malty; wheaty malts. Tart and a bit sour. Bittersweet yeasty bretty fruity throughout. Fairly subtle flavours. Dry yeasty finish. Refreshing. Nice bretty saison! (2016-01-20)

Pours light golden with very slight haze. Very tiny head around the rim. Nose smells very much like cider. Lovely and fresh with a bit of rosemary. Very nice.

On tap at Uiltje Bar, Haarlem. Pours cloudy golden, white head. Fruity, citrus, some yeast, zest, lemon, malty. Moderate hoppiness, light to medium acidity. Dry bitter finish. Medium bodied.

Bottle, Brewdog Leicester. Hazy yellow gold with a large foam. Funky, spritzy yeast with lemon. Cheesy. Spicy. Floral. Green apple tartness. Leafy herbs with lime rind. Good saison from the UK.
