Bottle, 75cl corked, at Bier Central. It pours an unclear, reddish amber to brown body and a dense, light beige head. The aroma is intense and lovely. Vinous and slightly acetic. Slightly woody and a bit sweetish, with the alcohol sure present. Some peppery notes. Very warming on the palate, full-bodied and smooth, with a fine blend of flavors. Red wine, vinegar, dark fruits, sugar, hints of dried fruits and a yeasty hint. Super-long finish, where the warmth stays the longest time. A true beauty. UPDATED: DEC 16, 2012 Sampled at OBER Kerstbierfestival 2012. A bit unclear amber colored brew, virtually no head. Smell and taste malts, lots of alcohol, some sourness, spicy as well. Pours amber/orange with a small creamy head. Nose and taste is of yeast, orange, prunes, figs, alcohol, caramel, wood , red wine, and nuts. Both sweet and sour in a balanced way. 750 shared by Marcus and I at Delerium. Bottle is 2008 Cuvee Special. Pours a dark amber with a decent beige head. Aroma has notes of oak and apple. Sour notes. Body is full and carbonation is fairly strong. Flavor is dark malt, and somewhat plummy sour. Malt is present to offset the sour. Becomes a bit vinous. Sour disappears with time. Changes. Goes really smooth in less than half an hour. Great beer.

Bottle from BVS, Brussels. It pours cloudy dark orange-amber with suspended particles and a fizzy off-white head. The nose is caramel, vinous, jam, grape skin, raspberry yoghurt, gingerbread, wood, prune and date. The taste is caramel, wood, leather, vinous, tart red grape, cherry, plum skin, sherbet, orange peel, spice, hint of vanilla, earth and some alcohol warmth. Medium body and effervescent carbonation. Bottle at Bagers - on christmas evening - shared with Mette, Bager, Per & Farmand. Cloudy red/brown - white head. What a lovely beer.... the winecasks helps the Bush de Nöel very much.... it turns it from way too sweet, to nice balanced and very complex. Soapy, citric, wood, nutty, light sourish (the good way), light sweetness, nice hoppy, dark fruits, fruity, caramel.... and so on.. very nice - lovely complexity. Sweet fruity aroma with spices, lots of oak, caramel, some oaky acidity, candi sugar and vinous notes. Sweetish flavor with fruits, light woody sourness, cookie hints, some spiciness and some sugar. [9/6/09] Bottle sample during a festival at De Heeren van Liedekercke in Denderleeuw. Cloudy amber with lots of floaties. Aroma of lots of fruits, caramel, some cookies, yeast and some spicy hops. Semi-dry flavor with yeast, fruits, spices, alcohol and some sweet malt. Medium-bodied. 7/3/7/3/14=3.4
Bottle. Poured a hazy brown with a large frothy light brown head that was fully lasting with excellent lacing. Moderate to heavy complex spice, fruit, yeast and alcohol aroma. Medium to full body with a smooth texture with soft carbonation. Moderate yeasty sweet flavor with a medium sweet finish of moderate to long duration. Very well done.
