Our Saisonnaire grisette was brewed several months ago and a portion enjoyed on tap as an end-of-summer refresher. A complex grist of organic pilsner and wheat malts, organic oats, rye, and buckwheat all contributed to the fresh grainy flavors, balanced by Spalt and Hallertauer hops. Now it has been reborn from chrysalis to butterfly, as the remainder has been refermenting and aging over three months with two unique strains of Brettanomyces. A mere 100 gallons of this beer was inoculated with Brettanomyces bruxellensis drei and Brettanomyces custercianus, which lend incredible citrus fruit and tropical fruit notes of pineapple, guava, and passionfruit as well as green apple flavors to this very dry, slightly tart ale. Amazingly complex, well-carbonated, and still light and bright and very drinkable, we look forward to more limited-release expressions from these two lovely little yeasts. Bright golden body shows light to moderate haze and a small but fairly well-retained white head.
Poignant peachy-pineapple in the nose is dried out by grainy, lightly spicy rye and dry wheat. Brett is not dominant, but shows light band aid and more pineapple and guava. Spicy hops accent the bright finish with no alcohol or flaws.
In the mouth, it’s dry and tart, but not overly dry with no huskiness and lots of guava and hickory nut from the brett. Lemon, orange rind and spicy-to-grassy hops lend themselves on the finish, with perhaps just a touch of soapiness, but otherwise very tart, challenging and crisp on the end. Fun stuff, don’t understand the negative reviews, but man does this stuff have a wide range of scores.

Poured at Wtf 2, cloudy orange yellow with thick white head. The aroma is lucas salt and grain. Thin mouth, brett, citrus, tart finish, decent.

Pours a hazy gold with a medium to large creamy white head. Big lemon and brett on the nose, sweet and funky. Loads of funky brett hit right away, lemon acidity, tartness. Long lemon and brett finish, funky and lovely.

Sample at Boulevardia 2014. Comes a cloudy pale gold with a tiny white head. Aroma of funk, citrus, and floral. Taste is funk, lemon, tropical, and floral. Pretty good.

I had a couple of ~2 oz samples at the Boulevardia Taps & Tastes in Kansas City, Missouri. The pour is hazed yellow golden with not much of an off white head. The aroma is lightly tart citrus, funk Brett and sweet malt. The taste is the nose, with the funk leather Brett being dominant, with the light lemon citrus and sweet malt in the back. The palate is light to medium bodied, with a dry funk finish. Nice one.

Pours a hazy golden yellow with a white rapidly dissipating lacing. Funk forward with some horseblanket followed by tropical fruit.

Draft at Cambridge Brewing in MA. Flight. Pours a cloudy yellow lemonade with a fluffy pillow of a head. Head lasted nicely and laced well. Aroma was mostly brett with a mustiness and some floral notes as well. The taste was very good with the tartness from the brett combining with the lightness of the grisette style beer. Citrus notes, especially lemon. Very clean and refreshing. Light body, moderate carbonation. Finish was just tart enough but it didn’t overpower like some do.

My Bottom Line:
Citrus fruit, brettanomyces and wheat are the setting for floral notes and resinous hop bitterness in this tart and dry quencher.

Further Personal Perceptions:
-A lasting veil of foam decorates the cloudy straw blond.
-Hop resins and brettanomyces are certainly harmonious.
-This one feels like a brett lemonade.
-It also tastes like a cousin of Jolly Pumpkin’s Bam Biere.
-Carbonation could be fluffier (tap settings make it nearly impossible to do this, it seems).
-Drinkability is very high.
