James and Pete paired up for Gentlemanís Wit (4.3% ABV). The inspiration, other than loving the zesty spiciness of wit, lies somewhere between a plate of lemon meringue pie and a cup of Earl Grey tea. James roasted 20 lemons covered in bergamot for 20 hours until they were juicy, fragrant, caramelised and sharp. The beer was made with a classic recipe and yeast strain with the lemons bombing into the whirlpool at the end of the brew.
Itís turned out as one of the most incredible beers weíve brewed. The colour is as beautiful as a beer can get: a hazy, unfiltered warm pastel yellow. The lemon and bergamot poke through the aroma, a hint of sharpness cuts through the middle, itís dry and interesting and quenching and a dry, phenolic spice ends the mouthful like a full stop ends a sentence.

Flavour of lemon, green tea and flower petals. Thin body with a watery texture. Lively fizz. Sharp, refreshing and dry. An interesting beer.

UPDATED: JUN 13, 2014 Lemon, pine and mellow dry funk. Cloudy yellow in bottle, less so on keg. Nice creamy head. Lemon, light touch of herbal sweetness. Beautifully zippy front palate then moving to bone dry. Wonderful summer beer when served correct.

Keg - Cloudy pale straw, thin white head, good lacing and good retention. Aroma is lemon, herby, pine and musty barnyard. Taste is herby, piney, grainy, grassy, coriander seeds and slightly sour. Medium body, light carbonation. Canít say I liked it that much.

Pours cloudy pale yellow with bubbly white head. Pepper, herbs, basil, citrus and pear nose. Flavour is bread, yeast, sour, not sweet. Light body. Flavour is not full on. Plenty of bubbles which leave a slight lemon bitter aftertaste. Very refreshing. Nice and a little bit different for style.
