James and Pete paired up for Gentleman’s Wit (4.3% ABV). The inspiration, other than loving the zesty spiciness of wit, lies somewhere between a plate of lemon meringue pie and a cup of Earl Grey tea. James roasted 20 lemons covered in bergamot for 20 hours until they were juicy, fragrant, caramelised and sharp. The beer was made with a classic recipe and yeast strain with the lemons bombing into the whirlpool at the end of the brew.
It’s turned out as one of the most incredible beers we’ve brewed. The colour is as beautiful as a beer can get: a hazy, unfiltered warm pastel yellow. The lemon and bergamot poke through the aroma, a hint of sharpness cuts through the middle, it’s dry and interesting and quenching and a dry, phenolic spice ends the mouthful like a full stop ends a sentence.

Draught at the brewery. Cloudy pale white yellow color, small white head. Smell and taste wheat, coriander or some other herb or spice and a touch of citrus. Average body and carbonation.

Something simple but nice refreshing coriander flavor. Good summer beer.
Do not take no yeast in the bottle bottom because it tasted of hand soap.

(Bottle). Slightly sweet scent of malt, citrus and yeast. Tart taste of yeast, citrus and wheat. The taste is a bit watery.

Bottle from Cornelius. Hazy pale golden body with a thin white head that slowly fades. Average carbonation. Light lacing. Aroma of lemonade, coriander and botanical notes. Flavour of lemon, green tea and flower petals. Thin body with a watery texture. Lively fizz. Sharp, refreshing and dry. An interesting beer.

UPDATED: JUN 13, 2014 Lemon, pine and mellow dry funk. Cloudy yellow in bottle, less so on keg. Nice creamy head. Lemon, light touch of herbal sweetness. Beautifully zippy front palate then moving to bone dry. Wonderful summer beer when served correct.
