750 ml bottle into tulip glass, bottled on 1/5/2017. Pours slightly hazy pale golden yellow color with a 1-2 finger fairly dense and fluffy white head with awesome retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, lime, peach, melon, pear, green apple, citrus peel, white grape, white wine, hay, straw, peppercorn, oak, leather, musty funk, herbal, floral, grass, wheat, white bread, light white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/acidic yeast, earthy hops, oak barrel, and pale malt notes; with great strength. Taste of big lightly tart lemon, lime, peach, melon, pear, green apple, citrus peel, white grape, white wine, hay, straw, peppercorn, oak, leather, musty funk, herbal, floral, grass, wheat, white bread, light white vinegar, and yeast/oak earthiness. Light-moderate herbal/grassy bitterness, yeast/oak spiciness, and lactic tartness on the finish. Lingering notes of tart lemon, lime, peach, melon, pear, green apple, citrus peel, white grape, white wine, hay, straw, peppercorn, oak, leather, musty funk, herbal, floral, grass, wheat, white bread, light white vinegar, and yeast/oak earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, earthy hops, oak barrel, and pale malt flavors; with a great malt/tart/bitter/spiciness balance, and zero puckering/astringent flavors after the finish. Moderately increasing dryness from tart/bitter/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately crisp, and grainy/sticky/acidic/tannic balanced mouthfeel that is awesome. Zero warming alcohol as expected of 5%. Overall this is a fantastic dry hopped gueuze! All around outstanding complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, earthy hops, oak barrel, and pale malt flavors; very smooth, crisp, and easy to drink; with the modestly lactic/tannic/drying finish. Wonderful musty Brett complexity; with balanced dry hops, pale malt, and oak barrel flavors. A highly enjoyable offering, and spot on style example. From a bottle shared at the brewery. Pours hazy yellow, with a medium, bubbly, white head. Apricot and peach aromas, with some resin, caramel, and syrup. Nice and dry, with a light, mellow tart flavor. Light to medium body, with an acidic, hard, and crisp mouthfeel. This is a lovely, surprisingly dry, crisp, and refreshing lambic. Bottle shared at the brewery. 2016 version. The beer starts spicy with lots of fruit. Moderate sourness, some grain. Very deep and complex, round and refreshing.
