COMMERCIAL DESCRIPTION
The world's classic Gueuze. A blend of one, two, and three year-old lambics creates a second fermentation in the bottle. The champagne of Belgium. In contrast, the Lou Pepe Gueuze is a blend of three 2-year-old lambics.

Newer vintages are labeled "Organic Gueuze", "100% Lambic Bio" or "Classic Gueuze".

Bottle from the source. Thanks, Jane! Pours clear opaque yellow orange, white head. Aroma is funky tart vinegar, apple juice, lambicy. Flavor is vinegar, tart funk, sour, kinda bitterness to it. Carbonated fairly heavily but not unduly so. Solid and quality is undeniable. But doesn’t blow my mind. Tasty overall with a surprisingly bitter finish

On tap at Garage Project Wild Workshop. Pours bright gold. Apple, white wine notes are big, funky hay, lemon, gooseberry, bread, little salinity, dried apricot, floral. Big fizzy body popping with citrus and acid notes. God damn I’m in heaven. I am literally in heaven.

UPDATED: AUG 19, 2017 Funky tart aroma in a golden yellow pour. Similar taste profile = slightly sour with hints of yeast, malt, apple, white grape, and citrus fruit followed by a dry moreish finish. A superb example of the style - and one that would also appeal to a sparkling wine drinker I suspect.

Clear golden yellow pour with small white head. Aroma of yeast, malts, grains, green apple, white wine and citrus. Taste follows the aroma, slightly tart and dry finish. Light bodied, high champagne like carbonation, nicely balanced.

Sample at Cantillon Brewery, after the tour. It pours cloudy whitish golden, almost no head, little to no retention. Aroma is low: bread, honey, quince, yeast. Taste is fizzy, bone-dry, light, very sour yet soft. Dry, short-lived, somewhat bitterish finish.

Bottle 37.5 cl (Bottled 17 may 2016). Clear straw-golden, noisy unstable white foam. Complex and noble aroma: floral, fragrant hay, light malt, citrus peel, homemade white wine, apples, esters and a drop of acetone. Taste: very dry and very sour, tart oak, very dry white wine and vinegar, old apple cider. Excellent!

Color dorado, ligeramente turbio, con capa de espuma blanca de tres dedos de grosor (apariencia cremosa y buena retención). Carbonatación media aparentemente, en boca se echa en falta algo más. Textura acuosa. Aroma ácido, a viejo, a madera, manzana ácida. Complejo y verdaderamente apetecible. En boca es una explosión de acidez perfectamente medida. Recuerda mucho a una mezcla de sidra y champán, por su carácter seco y acidez. Bastante frutal. Levadura presente. Se capta la madera pero sin llegar a estar excesivamente remarcada. Qué se yo, siempre me cuesta describir este tipo de cervezas. Son tan complejas y a la vez tan disfrutables...
