The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

From bottle to tulip. Slight rose and hazy with minimal head. Massive acidity and slight sour/tart. Very dry finish. I couldn’t really locate the hops, but still a nice beer.

12/08/2017 @Cantillon Brewery. Taster-Bottle A hoppy Cantillon. The aroma is slightly sour and hoppy. The taste is very malty. There is a distinct hop quality. Nice carbonation. Palate is full and slightly wry.

Rating #3,700. 750 mL bottle shared with ebone1988. 2014 vintage. The pour is a darker orange with a thicker dense light khaki colored head and a couple soapy streaks of lace. The aroma is interesting. There is a nice light sourness up front with a hint of an iced tea coming through on the back end. A hint of malt and a light hop on the back end works pretty well. The flavor is interesting. There is a tart tea leaf going on with a hint of citrus and a light hop. It’s really interesting, and balanced. I like it. The mouth feel is lighter bodied and more softly carbonated with a lingering dry citrus and tea leaf tartness on the back. I like this one more than I thought I would. 6 4 7 4 14

Bottle shared with koleminer20, for the book and his 3,700th rating. Finally. 2014 vintage. Aroma is perfume, floral, potpourri, pine, citrus, funky, weird. Appearance is amber, slight haze, fluffy light tan head.Taste is floral, sharp, funk, tart, citrus, dry, pine, very bracing. Mouthfeel is medium body, light carbonation, bracing tart floral funky dry aftertaste. Overall, there’s a lot happening here, definitely complex but a little trying to get through.

750ml bottle (thanks martjoobolut). Clear deep dark amber golden color. Huge size, thick beige head, stays. Sweet, malty, fruity, sour, caramel in aroma. Cherry stones, sour, fruity, raspberries in taste. So dry! I need a beer after every sip! So dry! Uhh not bad, but dry. Dry brew.

Very nice and complex Lambic. Aroma is quite classic - stable like hell. But it is surprisingly bitter in the aftertaste and it is very pleasant. I like it.

Sample at Lizardville Westerville during the Sour Beer Night event on 05/17/2017. Hazy orange-gold color with a medium white head that evaporates steadily to an outer ring. Short strings of lacing. Aroma of funky citrus, yeast and malt. Light-bodied with flavors of pithy citrus, funky yeast, doughy malt and a touch of earthy hop. The finish is moderately tart with a citrusy aftertaste. Pretty good overall.
