COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Sampled at Stoutfest. Label says its a 2007 vintage, but the cork says its 2010. I am gonna go with this being a 2007. Pours a hazy orange in color with maybe a quarter fingers worth of tight white head. Nose is exceptionally balanced. There is lemon and a fair amount of floral character to it. It resembles a Cuve des Champions or Saint Gilloise in my opinion. Flavor starts out with some bright lemon and then immediately turns to the floral aspect of the beer. Its gentle grass and tartness....exceptionally balanced. Mouthfeel is light, carbonation is gentle, as well as the acidity, a moderate finish. Never had this before, but I am a big fan of this. I enjoy the floral character of the beer quite a bit and it adds some nice complexity to the lambic.

Murky hazy orange appearance with frothy lively head. Smells gorgeously earthy with peachy, home-made wine notes. Flat as a pancake but tastes super sour and wine like with green apples, peach, barnyard funk and a rounded bitterness. This is a master class in spontaneous fermentation brewing!

Amazing aroma of apple, hay, funk, gooseberry, grapes, vinegar, a bit of cheese (in a good way) and the only flaw - a subtle note of solvent Great mix of tastes, low bitterness, a bit astringent (which is nice), a bit of sweetness and high sourness. Incredible one

Bottle shared. Semi-hazy orange pour with a thin white head that disappears almost instantly. Notes of apple vinegar, unripe grapes, barnyard funk, hop bitterness, unripe peaches and apricots. Medium body, flat, with a very sour and bitter finish.

On tap at Jester King during Zwanze Day. Pours a slightly hazy reddish color with off-white minimal head. Funk, barnyard, light fruits and must on the nose; follows onto the palate. Light bodied. Finishes with barnyard funk and some light fruits.

kinda amber/brownish pour, some foam. big funk on the nose. flavor is musty with some barnyard. interesting to try but not the fave.

2016 bottle. Hazy dark peach color with off-white head. Aroma has some fermented fruits, damp cellar, some vinegar acidity. Taste starts tart but also quite bitter and earthy upfront. Hay, barnyard, really rustic. Medium body with medium to low carbonation. Its a really interesting lambic but quite acidic with harsh bitterness. 2006 bottle. More balanced and funky. Dry, barnyard funk, not so harsh bitterness, long dry and sour finish.
