The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Bottle sample at a tasting at zvsns place. Thanks tomer! Cloudy orange with white head. The aroma has notes of funk, horse farm, brett, some fruitiness (apricot, strawberry) and yeasts. Sour flavor with notes of yeasts, sweat, brett, rose wine, strawberry, acidic, a bit salty, dry. Soft carbonation, light to medium-bodied. Excellent.

Bottle from Jeremy. Medium golden with finely beaded head. Aroma of stone fruit, tart, floral. Taste is more of the same, light and effervescent. Finish is equally sweet and tart.

Bottle sample, thanks tomer. Hazy a bit murky orange color. Aroma is funky, strong barnyard notes, vinegar, sulfur, oak, wine. Nice sour flavor, lactic, funky, berries, white wine, wood, vanilla notes. Medium-bodied, smooth with low carbonation. Great beer.

Unclear, golden orange colored, small off white head. Aroma is fruity tart, some flowery notes, vinous, moderate soury, some funk. Taste is light+ sweet malt, moderate tart sourness, fruity and flowery notes, medium bitterness, funky, dry and bitter aftertaste. Medium bodied, soft+ carbonation. Although generally not a Lambic fan, I like the added hoppy and bit more bodied touch in this one, really nice. (on tap, Cantillon Brewery, Brussels)

Shared at a tasting, smallish bubbly head, cloudy deepish oxidsed orange color, aroma of saddlle, sweat and sourdough bread, sadle and swaet flavor with biscuit and some mineral notes. Very nice and really mellow, grows on you.

Dark orange liquid, small head. Fruity aroma, sour, apple. Light body, little bit carbonation. Taste is amazing, sour, fruity. The taste of this beer is on a completely different level than anything I have ever tasted, and should get much more than a mere 10.

Keg @ In De Wildeman, sample size. Dark orange color, hazy. Frothy head. Aromas: sour, vinegar, woody. Retronasal its softer sour, woody. Flavor is sour with some bitterness. Light bodied. Low carbo. Some bitterness in the finish.
