The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Shared 750 ml bottle. Pours dark bronze with no head at all. Aroma is very tart with notes of yeast and horse blanket. Taste is tart at first but finishes bitter and bonedry. Didn't expect this one to so tart.

Glass from a bottle at cantillon. This tastes waaaay different then the oud beersel one. Pours hazy pink. Nose is faint cherry, wood ,almost no sourness. Palate is tart and sour and fruity and sour again. Wow, I really like this, just a bit too bitter, but it would probably be too sour if it wouldnt have the bitter edge to it. Could smell more intense too.

Bottle shared with the KL Tasting group. Poured a hazy orange amber with a fizzy off white head. The aroma is yeast, biscuit, tart fruit, light floral hop. The flavour is moderate sour with a light crisp, refreshing, yeast, woody, tart fruit palate. Medium bodied with average carbonation and a long bitter sour fruit finish.

From tap, as Iris 2014; orange golden color with a small white head; aroma is gentle funky, fruity, citric, some barrel character; taste is quite sour, fruity citric, fades into a solid dry funky finish with a oily grassy hoppy note; texture is slightly oily with medium to high carbonation and small body

Bottle pour at the brewery. Pours hazy golden with small white head. Fruity, citrus, wood, cellar, funky, sour, quite dry finish. Some bitterness in finish. Medium bodied. We were warned before ordering it might not be in best shape, but still a very interesting beer.

Bottle. Vintage 2014. Very complex and vast aromas - barnyard, wet leather, lactic acid, caramel, gooseberries, lemon, grapes, funky, green apples. Taste is dry and sour. It all together really goes with quite strong maltybackbone. Medium to full body, smooth and creamy texture, average carbonation, finish is malty, vinous, moderately sour. In overall great brew.

Donkerblond bier met witte schuimkraag die snel wegzakt tot fijn laagje. Aroma van zure appel, azijn. Vineus, houttonen. Lekkere lange droge afdronk. Top.

Nearly clear amber colour. Aroma is sour apple and apricot. Taste is yeasty and quite sour. Tannic.
