COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

750 ml corked and capped green bottle; bottled on May 5, 2012; almost 9 months old. After almost three and a half years on this site, an unblended lambic finally comes my way. This is the last style on this website that I have yet to rate, all other styles long since found and rated. I’m not a trader, so this shit is hard to come by, especially here in North Idaho. I have Russell Mann at Enoteca to thank for this. I placed my order for this about two years or so ago and it took him awhile to get it, but he followed through. Pours murky orange with a large cream-colored head with good retention. Aroma is wonderful in its funkiness, classic lambic barnyard with lemon, floral, earth, SweeTarts--nice and pungent, although my favorite American sours are a bit more up my alley. Taste is nice, sour and acidic, but not quite as mouth-puckering as La Folie or Avery Odio Equum; finishes dry and a little bitter. To my surprise, it’s not flat. I’ve always heard unblended lambics were lacking in carbonation, but this isn’t; it’s actually moderate. Really good, but I prefer Cantillon’s Gueuze. Definitely a worthwhile beer seeking out, even if it takes awhile to find its way into your hands.

Very nice and complex Lambic. Aroma is quite classic - stable like hell. But it is surprisingly bitter in the aftertaste and it is very pleasant. I like it.

Sample at Lizardville Westerville during the Sour Beer Night event on 05/17/2017. Hazy orange-gold color with a medium white head that evaporates steadily to an outer ring. Short strings of lacing. Aroma of funky citrus, yeast and malt. Light-bodied with flavors of pithy citrus, funky yeast, doughy malt and a touch of earthy hop. The finish is moderately tart with a citrusy aftertaste. Pretty good overall.

Bottle. Aroma is less funky than regular geueze, fruity hops, pine needles, a tad flowery. Sweet malty flavour with a touch of hops and fruit notes. Good beer.

Importerad flaska. Bärnstensfärgad med minimal kolsyra. Doft av citrus och vitvinsvinäger. Sträv och träig munkänsla. Smak av citronzest, vitvinsvinäger och ungt träffat. Mkt beska.

Flaska brewdogs webshop. 75 cl. Grumlig orangelysande vätska. Syrlig och stallig doft av vinäger, citron och blommor. Mycket syrlig även i smaken. Trä, citron, jäst och harsyra. Mycket torr och sträv.

750ml bottle. 2016 vintage. (6.5% ABV) Pours a hazy orange with a medium, fizzy, short lived, off-white head that leaves spotty lacing. Tart aroma of lemon rind, white wine, cider, horse blanket, flowers and oak with caramel malt lingering in the background. Tart flavour of lemon, lime, apricot, brett, white wine, apple cider, vinegar, oak and caramel malt with a dry, bitter, acidic finish. Medium body with a creamy, smooth, oily texture and average carbonation. Awesome, full of complexity. World class.

Glass from a bottle at cantillon. This tastes waaaay different then the oud beersel one. Pours hazy pink. Nose is faint cherry, wood ,almost no sourness. Palate is tart and sour and fruity and sour again. Wow, I really like this, just a bit too bitter, but it would probably be too sour if it would’nt have the bitter edge to it. Could smell more intense too.
