Bottle 375ml. Aged 18 months piror to tasting. Poured dark muddy blood with a small, pink, frothy head which was mostly lasting. Aroma had almost perfume like characteristics with notes of roses, violets, crushed raspberries, sour cherries, wild yeast and salt water. Flavor was extremely tart with a massive acidic bite; gooseberry skins, sour cherries, red wine vinegar and light notes of oysters & salty brine. Medium bodied with lively carbonation, a dry/spritzig mouthfeel, ever-so slightly syrupy texture and a superb length finish. Amazingly delicate yet infinitely complex.

I’ve been sitting on this for a couple years and after a 10 Km canoe ride, I came home for a shower and beer. I had tossed this in the fridge last week and today is the day to open it. Aroma is sour raspberry, earth, funk, and peach. Taste is cranberry, fucking acidic cranberry, then funk. The second and third pulls give some sweetness too, somewhat like blackberry and then some late bitterness. Th colour is a light and a little hazy, transparent red with an off white thin ringed head. The mouthfeel is puckering and a touch chalky. Brilliant.

Enjoyed at home. Looked forward this one. The big surprise is the amount of bitterness that this holds, you have to get used to it to fully grasp the rest of the tastes and the overall complexity. The aroma itself is pleasant and well balanced cherries with vanilla and some funk. The taste however also carries oak, vanilla, fruitiness along with the sourness and cherries.

Aroma is acidic cherries with lemon. Taste is up there, tart and rowdy with a cleansing sensation. Dry and rather bold in it’s acidy glory. Pite na miejscu w browarze. Świetny aromat dojrzałych wiśni pomieszany z stajnią. W smaku dojrzałe wiśnie, lambik i beczka. Wszystko pięknie się komponuje.
