Rating 1700! Bottle - thanks again Adam! From my shiny new 3 Fonteinen tumbler, thanks for that too, Adam! Pours clear honey-gold, with a thin white head that laces really remarkably badly. Full disclosure: I LOVE Elderflowers! Nose is rosewater, lilac, lily, fresh ginger, orange blossom, apricot, elderflowers... Such an amazing nose. I thought that a big, brash, lambic like Cantillon would disrupt the elderflowers, but nothing could be further from the truth! Flavours of peardrop, flowers, rosewater, Thai basil, salt, still quite juicy. Just delicious!

Bottle at the brewery. Pours golden yellow colour with moderate white head, which disappears quite quicky. Pickles, black pepper, spicy notes, hints of sulfur, slight sourness in the aroma. Black pepper, pickles and sourness at first. Sourness and pepper in the middle. Slight acidity and black pepper in the end. Taste is very delicate and rather unconventional, but very good.

Bottle shared at the source. Pours light hazy orange, not much carbonation there. Nose is soft, lightly acidic, some fruitiness and fragrant funk overall. Taste brings out lots of elderflower, really liking its soft velvety touch. Light herbal character giving way to slightly bitter and tannin-filled finish. Displays the flower nicely, another masterpiece from Cantillion.

Bottle from De Bierkoning, Amsterdam. Cork dated "16/17 Season". Moderate amount of carbonation. Hazy golden in colour. Aroma is definitely elderflower - for those who know it, you will recognise it straight away - but could easily be mistaken for just being lemony or funky. Taste again is elderflower, mango, lemon and sourdough. Sourness is probably on a medium level. Very well balanced beer in general. A joy to drink. Spectacular really. Elegant and in a class of its own. Ive had a few sours lately which are just amateurish in comparison. This is how its done. Cannot be improved upon in my book.

(2017) Well I was kind of hoping for more. The aroma is super promising (elderflower super strong). Te base is really delicate white wine alike and slightly sour.

pjotrapostou (362) - POLAND - NOV 9, 2017
W zapachu dużo bzu, w smaku dość kwaśne, trochę dzikie, bez tez jest ale mniej wyraźny niż w zapachu, dość ostre i mogłoby być lepiej ułożone.

2016 vintage. Pours pale yellow / golden with small white head. Aroma has elderflower, very floral, grapefruit, sour. Taste is lots of elderflower, lemons, grapefruit, very dry and sour finish.

Bottle, at the brewery. 2017. Pale orange. Light haze. Slim ring of white head. Nose has recognisable, cheesy, woody funk. Notes of elderflower. Baked apple. Squidgy pear. Very fruity, with maybe some light hop character. Taste is floral, and herbal sweet, turning dry, and light sour. Light body. Dry and cleansing. Woody, herbal, floral finish.

750 ml bottle, bottled 14.6.2016, shared by Werckmeister, many thanks. Pours a hazy, dark golden with a white head. Mild aroma with some sour berries, some funk, blossom, very lightly cellary and very lightly cheese, fermented fruits. Light to medium body with a medium carbonation, a light sourness and a light to medium bitterness. The flavor starts with some citric acidity, lots of tart berries, unripe gooseberries, white grapes, quince, pomelo. Towards the finish there are tart elderflowers, light woody, some cheese. Overall very balanced, finishes dry and slightly astringent.

750 ml, bottled 14/06/2016, bottle shared by Werckmeister, thanks!
Orange, moderate hazy body, with a medium, frothy, yellowish head.
Aroma of sweet elderflower, barnyard, unripe fruits, citrus, some basement, some wood.
Tastes quite similar, with a bit more of the unripe fruits, like pears and apples.
Medium to light, slick mouthfeel, with an average carbonation.
Finishes medium dry, moderate funky, sour-fruity, cheesy, wooden, with elderflower, unripe pears, green apples.

Very tasty, balanced stuff. Just the right levels of funkiness, sour fruits and sweet elderflowers, with a pleasant dryness towards the finish. Among my favourite Cantillons and a really characterful style example.
