While many factors determine whether you have had "Jonge" or "Oude" Lambik, a general rule of thumb is to enter 1 year-old or older lambik under "Cantillon Oude Lambik" and anything less than 6 months-old under "Cantillon Jonge Lambik".

For those between 6 and 12 months of age, you should take in to consideration the character of the lambik. Samples presenting themselves as hazy/cloudy, with some head-formation and residual sugar should be entered as "Jonge Lambik", while those that are drier, higher in clarity and with little/no head formation should be entered as "Oude Lambik".

Sampled @ Borefts 14. Clear yellow to orange colour with no head. Smells sour, dusty, wild yeast. Tastes sour, wild yeast, cork. Medium body, soft carbo.

golden colour. aroma bit of sulphur like burnt plastic and hay. taste was mellow citric acid, bit of sulphur, more hay with a dry finish. very slick oily mouthfeel. nice. draft @ cantillon

@ Brasserie Cantillon - 18 mois dage. Blonde doree sans carbonation ni collet. Des aromes aigres et vineux. Le vin dorge par excellence, pas de petillement en bouche, le cote aigre qui ressort pas mal (il faut etre habitue...), notes boises. Interressant mais cest tout de meme pas ma tasse de the

18 month old I blended Lambic at Cantillon brewery with Kimberly and Taylor. Aroma is young cantillon funk, a little empty compared to the oude Gueuze. Taste is not as dry as most all other cantillon, and a little watery, wheat notes still present. Almost zero acidity. I could pound this all day, easy. Love.

At Cantillon, june 18th. 18 months old. Pours hazy yellow with no head. Aroma is medium barnyard, oak, earthy, citrus and light floral. Taste is medium tart citrus and apples with a rounded smooth barnyard and earthy note, lingering medium tartness. Smooth creamy texture.

Jar @ Cantillon Brewery. 18 months old acording to the server. Pours golden with just a few white bubbles along the glasside. Aroma is sour, bretty, malt, dusty, barnyard, grapes, white wine like. Flavor is sour, grapes, apples, white wine, yeasty, dusty, webs, barnyard. Medium body, flat carbonation, lasting sour wine like finish. Great beer, thats very easy to drink. 290714

[email protected] 3 years old aged. Bire quasi plate offrant un nez fleuri, bois avec une fine acidit dveloppant des esters alcooliques. Le corps est fort bois, soyeux voire mme un peu mielleux avec une amertume moyenne assez acre la fin.

Drank at the bruery. 18 month old. Good stuff! Pours almost clean amber with almost no head. Aroma is just clean! Very rural and tart. Moldy oak, leather and weak barnyard. Really natural and nice aroma. Taste is gentle and tart with notes of citrus, oak, weak vinegar and a nice dryness. No carbonation suits this beer. Very romantic and idyllic beer to drink year round.

UPDATED: JUL 26, 2014 18 months old at Cantillon. Dark golden with no head. Deep grains with very bitter lemon peel, follow by a sour slightly acidic fruitiness and a strong bitter woody finish. Didn't expect it to be so bitter, but this is pretty good for a non carbonated beer...
