Bottle (750 ml). As "Lambic Pinaut d’Aunis". Bottle from the Missus, aren’t I lucky!?! Also a huge thanks to Cynthia for making this possible! Beautiful clear bright red with a small to medium persistent pinkish head. Aroma is cherry forward with a really nice and well integrated peppery presence that makes it quite different from St-Lamvinus. Nice cheesy notes as well with not much of the usual Cantillon lemony funk. Taste is very winey and quite dusty with loads of cherries, light funk and peppery notes. Sourness level is moderate. Medium body. Medium carbonation. Really tannic. Soft, well balanced and delightful. The peppery presence really add a nice dimension to this beer. Loved it!

Bottle shared by tom10101, many thanks for the rare opportunity Tommy! Pours a bright red with a small white head that leaves low lacing. Nose is of cheese, light rubber, fruits and light vinegar. Taste is moderately acidic with winey flavors. A little less flavourful that I thought it would be but you still get the grapes, oak and lambic so all is well. Citric. Body is light and the vinous feel is very real. Refreshing. Overall a nice and classy fruited lambic, glad I was able to partake!

bottle shared by tom10101, massive thanks bro! pours hazy bright red-pink with a small pinkish cap, slightly reviving. bright red grapes and cherries, kalamatas, dark leather, tannins, purple matter (!), pink pepper, light to medium acidity - seems mostly citric; raspberry vinegar notes, relatively complex flora. moderate carbonation, light body, dry, assertively tart citric-tannic-herbal finish. pinotaged. cherry-oriented. bit rough on the edges but still a very very good fruit lambic.

Aroma of red currants, raspberry, dried cranberry, red apples. Taste is very very mineraly, light barnyard with an autumny ripe apple flavour, earthy and a bit complex, but not that flavorful.

Btl @ cantillon July 15 Looks... Light burgundy, cherry red. Sml White, but slight pink tinged head. Smells... Earth and spice..white pepper, red vinous grapes and that friendly and familiar cantillon barn. Tastes..loads of the carignan grape, it’s earthy, fruity and definitely spicy in a white pepper direction, that pepper aspect is noticeable but not overpowering and it stays through a dry oak finish. Delicious.

(750ml bottle as Pineau d’Aunis @ Cantillon brewery, July 28 2015) Pours nearly clear deep pink with a whitish head. Aroma of red wine fruitiness, grape, plum and some berry blend. A real peppery, spicy herbal hop character, musty funk, some wood. Flavour has a nice acidic red grape tone, berry seeds, lots of peppery and spicy notes, dried herbs, some tannic barrel notes on the finish. Medium bodied with soft carb, this is complex and a gorgeous druiven lambic. My description doesn’t do it justice, but there’s a wonderful counterpoint between the fruit and the other components that elevates it above the other Cantillon wine grape versions I’ve had. Stunning.

Bottled as Pineau D’Aunis: Taster: Aroma has more cellar and earthy tones with of course the typical Cantillon funk and some nice fruits with a light floral flower tone. Flavour is more vinousy, bitter, fruity, funk, dried fruits, cellar, light herbal/floral tones, some wild yeast and light herbal earthy tone. Aftertaste is bitter funky, some vinous wild yeast/vinous wort, dried fruity tones... Low carbo, creamy light sparkling light dry funky mouthfeel, more than just medium bodied.
