This is a big, malty and rich Belgian-style abbey ale. We combined both US- and Belgian-malted barley and a specially selected yeast strain to produce a truly unique beer. This beer was brewed as a thank-you to my father Vince who has helped to make this brewery a reality. It will be brewed once a year and released on Fathers Day. This is a great beer for aging, so lay some down and try it in a year or two! Sensory Profile: Ripe fruit, figs and chewy malt are a few of the flavors you will encounter in this beer. There is an underlying roastiness and caramel sweetness that comes through toward the end. Hops play a background role to the malt character of this brew. Food Pairing: This beer can stand on its own as an after-dinner drink. A rich brew to sip and enjoy, it also goes great with desert or roasted meats. Use this beer as you would a full-bodied cabernet or an aged port.

Pours dark brown with tan head. Sweet dark fruits, candy, brown sugar, purple grape juice. Syrupy texture. A little too sweet for my liking, but if you like sweet, you might like this one. It is not boring or bad, just too sweet for me.

2/17/2011 9:00:03 AM Bottle from Bierkoning. Hazy orange body with a big head. Nose of fruits, caramel and yeast. Taste is malty but really sweet and fruity. Not at all what I was expecting. Lots of caramel in a syrupy texture. Good.

Bastante bien.

Bottle. Cola pour with a big off white head that dissipated quickest. Chocolate, charcoal, raisin, hop. Medium body. Good carbonation. Perfect slightly acidic and sweet finish. Very nice

Bottle shared tonight by Dr Rob, thanks for the opportunity! Fruity caramel and brown sugar with a hint of chocolate offset with yeasty earthy flavors. This is a nice dubbel.

This one poured a lighter brown color with a beig head. Aroma was of caramel, dark fruits and belgian yeast. Falvor was the same, moderately spicey, toast, caramel and dark fruits. Ok.

This is a Belgian Style Abbey Ale or more accurately said, an attempt at one. The head was off white and rather small, and the look was a cloudy dark brown. The aroma was of sour hops. The taste was creamy (a tick on the Abbey Ale style inspection), with some caramel and a tiny amount of roasted coffee. It finished with a light sourness and there was pretty much no aftertaste. Not bad.
