Puréed green apples from France are added to the fermentation to define the familiar acidity of a lactic sour, then the beer is "dry-hopped" on fresh wasabi roots. In Intermezzo, sweet and piquant whiffs of real wasabi cleanse the bright tartness of green apple while the nutty finish of the kernel of pale malt is left to eradicate winter’s weight. Drink Intermezzo because it is time to refresh.

UPDATED: JUN 11, 2015 This new batch is a remarkable improvement over the previous for me. Wasabi is present but not overwhelming, hints of green apple and a bready malt base. Lightly tart and oddly refreshing. Best of all, no weird bile taste like last time! Not my favorite beer of all time but a huge improvement on what had been my least favorite Carton beer of all time.

Draft sample at carton. Hazy and cloudy. Tart green apple throughout. A light touch of wasabi. Lactic but, clean. Very summery. A little sweet. Better than I expected.

I wanted to like this beer since I’m a huge fan of Carton Brewing, but I found that it lacks the delightful qualities of Monkey Chased the Weasel. The combination of sour apple and wasabi make for a somewhat unpalatable blend of sweet and tart.

Draft at Browerij Lane with Clockwork and Joel. Pours a lightly haze cloudy body with thin white lacing. Aroma is pungent parmesian cheese and funk. Mouthfeel is medium with notes of tart fruit, light cheese, sour fruit and some apple. Weird and nice.

Draft in brooklyn Wow this one is weird. Green apple tartness mixed with parmesan cheese. The cheese was overwhelming, pungent and ripe.

jtclockwork (17654) - , New Jersey, USA - JUL 23, 2013
Draft with James and GOTC. Pours cloudy yellow with white head. Nose and taste of lactose, wasabi, banana, wheat malt and Parmesan cheese. Lighter medium body.

keanex (1799) - Atco, New Jersey, USA - JUL 11, 2013
On tap at Joe Canals West Deptford.
Appearance: Hazy straw body, no head.
Aroma: Sulfur and green apple.
Taste: Sulfur with crisp green apple, light sour on the finish.
Palate: Light bodied with medium to high carbonation.
Overall: Very meh. Sulfur city.

Lubiere (14262) - Ottawa, Ontario, CANADA - JUL 10, 2013
A hazed blonde ale with no head. In aroma, strange mix of sour lemons and light bilous notes, a bit of rotten veggies. In mouth, a sweetish and sour ale with epsom salts and light peppery notes, probably from wasabi.

pineypower (3350) - Ocean County, New Jersey, USA - JUN 22, 2013
Draft at Scott’s. pours a cloudy yellowish color with not much of a head. Aroma is terrible, sawdust vomit cleaner, rotted fruit, sour apple, light wasabi root. Taste is thankfully significantly better. Tart green apples, lightly spiced wasabi root, some mild sweetness, refreshing body feel and a solid drinking beer if you can handle the aroma and tell your brain the taste will be that much better.

Jesterdeal (1986) - Marlton, New Jersey, USA - JUN 19, 2013
Aroma of green apples, bile vomit, and a faint hint of wasabi peas. Pours flat and murky pee like a berlinner. Taste is nice and tart with apple peel, underripe citrus and a yeasty biscuit. If you can get past the smell of vomit, it’s actually quite refreshing.
