Cascade Apricot Ale is based on our Temptor Triple Ale that has undergone over 8 months of lactic fermentation and oak barrel aging. Ripe NW Apricots are fermented with this beer for 3 additional months. This hand packaged and bottle conditioned ale will only get better with age ... good luck waiting.

Serve at 45-50 Degrees F.

2011. Hazy orange with a clean white head. Lots of citrus aromas, lemon; clean sour; light funk. Apricots hide in the finish, tartness dominates the palate with a biting sour character that sits at the back corners of your tongue. Light body with a mouth-watering finish and medium carbonation. Light but complex sour notes make this a great American sour. Worth seeking out to try, grab a bottle to age.

Bottle. Pours clear golden yellow with no head. Aroma is apricot, lemon and a hint of funk. Taste is apricot sweet, mildly acidic, a touch of lacto.

750mL corked & caged bottle courtesy of agl108. 2015 Project. Mine says 7.2% ABV. A hazy glowing gold pour with a thin beige head. The extremely tart aroma features vinegar, apricots, kumquats, peaches, lemons, wheaty grains, oak, lactose, and funky cheese. Goes down medium-bodied and perfectly crisp. Wheaty grains start things off taste-wise. An oaky woodsiness and cheesy funkiness follow. Tart apricots and zesty/sour kumquats finish things off. There is a slight touch of warming alcohol at the very end. Dry. Lots of vinegar qualities throughout. Delicious!

Bottle. 75cl. Its an unclear orange colored beer with a small off-white head. Rather sourish aroma, citrusy and lightly piney. Its dry and full to medium bodied, smoothly carbonated and with a flavor of citrus zest, peaches and some pine cones. Very dry, fruity finish. Perhaps too dry this one, but sure nice. 161231

Appearance:
Turbid/opaque golden/amber beer with a slight off-white head.

Taste/Palate:
Starts medium sweet with malts, fruit and apricot; ends slightly bitter, dry and medium sour with citrus and lactic acid.

Overall:
This beer is intense, complex and balanced. Amazingly mix of sweet and sour, creating a really authentic fruit flavour. So much going on in this beer, it is great.
