COMMERCIAL DESCRIPTION
Manhattan NW, a NW style sour ale that was, until recently, a secret. It’s a blend of Blond Quad aged in Heaven Hill Bourbon barrels on 150 pounds of sour pie cherries for five months before additionally aging on apricot noyaux for three months. Aromas of cherries, Bourbon, sweet candy and hints of spice are noticed up front. Tart cherry skins and Maraschino cherries on the palate lead to a dance of rich cherry notes that are followed by slight Bourbon sweetness. Much like the process to make fission, the steps involved here are greater than the sum of their parts. What isn’t a secret? At 11.32% ABV, you’re going to need a designated driver

Tap @ Borefts. Vinous aroma with coconut, orange, oak and vanilla. Sour, oaky flavor. Vinous, dried orange. Bourbon. Malty sweet, but nice and complex.

Sampled at Borefts 2016 - Dag 1, merci Art. - I’m afraid that I found this lacto-powered "sour" just as sharply acidic (straight vinegar), lacto-derived and overharsh (solvent) as the previous ones, though I tried to like them, see what the hype, queues and price tags are all about and respect the well-hidden alcohol of this imperial sours. - What I taste is a thin sour skeleton, artificially cherry-flavoured mineral vitamin tablet dissolved into a fizzy soda, organic traces of those original fruits devoured by an aggressive lacro culture that cuts straight into the enamel of my teeth the way no oude lambiek or Belgian geuze does, andonly a few kettle-soured Berliner Weisses have done so far. - What remains: cinnamon dust, maybe some almond powder sprinkled over an instant lacto sour lemonade. "the steps involved here are greater than the sum of their parts." - 5 Cascade samples in, I have to subscribe to this, although at an affordable price, count me in for a blind tasting against e.g. De Leite’s instant BA lacto-sours with some more body...

From tap. Pours hazy orange with a small white head. Aroma is dryand citric fruity. Smooth fruity, mellow. Dry and li gering fruity. Smooth and lingering fruity far finish.

Draught at Borefts ’16. Red/amber with a small off-white head. Medium to full body with low carbonation. Quite sour with subtle sweet and bitter tones. Oak, vinegar, grapes, cherries, spices. Heavy stuff.

On tap at Borefts ’16. Reddish amber-brown colour, off-white head. Aroma of oak, bourbon, vanilla, red fruits, hint of cherries, red wine. Flavour is oak, wood, bourbon, vanilla, caramel, cherry, red wine, sour, tasty stuff. Medium bodied, slightly alcoholic.

Keg @Borefts 2016. Pours red/amber. Nose is fresh but you can also smell the sourness, zesty fruits up front and big cherry. Taste is earthy (if this was wine we would be speaking about the terroir) caramel, apricot and huge cherry. Simply superb.

On [email protected]: pours deep dark amber with off- white tan small head. Aroma-flavors: chocolate, toasted toffee, sour cherry, cherry wine, oak, hint of caramel, vanilla, bourbon, tanninnls, astringent, dry, slightly. Tart finish.
