COMMERCIAL DESCRIPTION
Our Saison is as old-world as it gets. We use 100% Colorado ingredients: Colorado water, malted and raw barley and wheat, Crystal hops and a yeast blend of saison yeast, brettanomyces and lactobacillus. We ferment the beer in custom-made open oak barrel fermenters. After this rustic primary fermentation, the beer goes to other barrels for further aging and flavor development. The result is a citrusy, dry, tart and effervescent beer worthy of sharing.

UPDATED: DEC 8, 2017 Hazy yellow-gold pour, small white head. Aroma of lemon, yeast, apple and peach. Taste follows, with apricot character. Quite tasty.

Bottle. Woody, slightly smoky nose, brett, lemon, touch of lactic acid. Nicely tart and citrusy, horse blanket, crisp, clean grains, very nicely done.

UPDATED: NOV 11, 2017 Bottle shared by Miles. Pale straw gold with an acidic soft wheaty aroma. Soft bodied and zesty with a great tart lemon lactic acidic flavor. Not so complex but bang on.

6 oz pour on draft at Snallygaster 2017 shared. Mostly clear yellow with off-white head. Aromas of lemon citrus. Tastes of slight tart notes, lemon citrus, stone fruit. Light body with a dry finish. Very nice.

Tasting at Andy and Pearl’s new place. Pours a hazed gold with a medium sized white head. Musk, funky and fuzzy. Medium bodied, slow and soft, tangy with some light acidity. Tangy, soft musk, fruity and funky, lovely yeast. Gorgeous.

Bottle snagged by chance at Coaltrain. Pours hazy yellow, with a big, fizzy, off-white head. The aroma is light lemon juice, caramel, some apricot, and cloves. Fairly sweet, with a smooth and easy sour flavor. Light body, very acidic, lively, and crisp. This is a very tasty, tart, and smooth saison. Thoroughly enjoyable.

750 ml corked and caged bottle purchased at Aspen Wine and Spirits in Aspen, Colorado. Label on bottle with Bottled on 2/3/17. Label also indicated this was Motueka hopped. The pour is hazed golden with a fizzy white head that falls fairly quick. The aroma is tart apple fruit, lime citrus and oak barrel. As the beer warms, the oak becomes more prominent, as does the tart funk house yeast. The taste is the tart citrus, lime, lemon, the woody oak barrel, and the general funk sour brightness of the yeast. As the beer warms, the integration of flavors is very nice. The palate is medium bodied, unfiltered, soft natural carbonation and the funk, tart yeast finish. Tasty beer.

Lightly hazy gold pour with a bright white head. Nice lacing. Aroma is tart acidic citrus, wheat, white wine, and green apple. Taste is tart lemon, white wine, citrus zest, and some grain. Bright and lightly acidic. Fantastic beer. Nelson and Moteku.

(On tap @ CBC 2016 Yellow Session, Copenhagen) Pours pale gold with a fine white head. Nose of pretty tart crabapple, honey, aromatic lemons, yeasty and bready, with a solid mineral overtone. Flavour is super crisp, lean, a bit acidic but in a zesty rather than sour way, with the mineral bite of lemon in soda water. Fruity citrus augmented by a hint of grape skins. Funk component is fairly light, making itself known in the finish along with a hint of oak. Quite dry overall, quite mineral. Light to moderate body with zippy carb. Really refreshing and cleansing.
