Not knowing if it had been done or not, I was curious about brewing a beer entirely with maple sap no tap water, so I did. The result is absolutely FABULOUS something I have never tasted in any beers that I tasted so far, I also added pure maple syrup to the fermentation. Brewed with a high % of Rye Malt, this brew is made to enjoy with a nice cheese. The sad side of this one is it can only be brewed during sugar camp season. I’m getting ready for next year!

Obviously, I was surprised by this one. I thought of drinking maple syrup, too sweet... but no, it’s like having a nice barley wine with slight twist of maple. Fantastic!

On tap at the Hardrock 42 in Sudbury. Subtle maples notes, lots of roasty, bordering on burnt malts, slight anise, with some fig and apples. Hints of soft spice, low bitterness, fruity esters with hints of sweet maple.

On tap at Arrow and Loon. Pours a thin head and has an amber/coppery appearance with rusty like highlights. Light maple aromas, toasted malts and hints of caramel. Alcohol is readily apparent after the first sip. Flavours are mainly malty, some notes of maple are there for sure. The rye is also fairly noticeable, much more in the finish. Pretty good stuff, but a bit too pricey for my liking. Will have again for sure, if the price is right. Also tried at Arrow and Loon aged 6 months. At 9.2%, alcohol is much more in your face after being aged and the maple sort of takes a back seat.

Bouteille de 500 ml achetée directement à la brasserie au coût de 7,90$. Arôme: Légère odeur de caramel. Apparence: La couleur est ambrée opaque avec une faible densité de bulle. Présence d’un moyen col mousseux et d’une fine dentelle sur le verre. Saveur: Léger goût de caramel et d’épices avec une pointe d’érable. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement sirupeuse. Moyenne effervescence en bouche. Arrière goût légèrement sucré. (Rating #7411)

Pours orange brown with a small white carbonation. Extremely low carbonation. Aroma is extremely sweet and spicy. The rye spice and maple syrup comes through. Taste is sickly sweet with rye spice. It doesn’t work that great. I’d prefer to not finish this.

500 ml bottle from the brewery, served cold in a tulip glass.

App.: Hazy deep reddish-copper with a so-so light tan head. Aroma: Sweet and malty, caramel/toffee, candied fruit, berries, a touch peppery (from the rye, perhaps?), a bit of booze/solvent, kind of a vanilla/coconut thing, so sweet-smelling. Palate: Medium-full body, fairly full, slightly prickly carbonation. Flav.: Lots of sweet and fruity maltiness, toffee, berries, booze, faint solvent, more booze; quite sweet with almost balancing bitterness and a peaty smoke finish.

Decent in small doses.

Pint at the Arrow & the Loon, with a 9.2% ABV. written. Pours a hazy amber colour with minimal lacing. A very sweet nose of malt with Macintosh apple notes. Again, sweet malt flavours with alcohol and apples. Pretty decent strong ale with sweet notes of apples (not much maple though).

[bottle] Sweet and spicy aroma with some sweet ethanol and complex strawberry and apricot accents. Hazy, tawny copper under a dotty, white ring. Sweet and spicy flavour with ethanol and rye characteristics. Nutty and with apricot notes, but no obvious maple. Faint popcorn. Medium body, moderate to medium carbonation, sweet and tangy finish.

Lubiere (14240) - Ottawa, Ontario, CANADA - MAY 8, 2013
A hazed dark amber ale with a thin off white head. In aroma, light nutty malt with light woody maple. In mouth, a sweet roasted malt with maple and licorice notes, burned caramel and alcohol. Nice.
