Huge fruity hop bomb! Tge fruit comes through quite a bit with some great yeasty esters. The big hop pinch mingles so well with the fruit flavors. Loads of apple, citrus, and pear. Tge finish is crisp and bitter with a little sour kick. Wicked stuff.

750 ml bottle; 2009 vintage fresh from Quebec; thanks Fred!!!! Clear, straw gold with huge eggy bright white head settling oh so slowly; fluffy white eggy head; floral nose of sweet, lemony fresh cut grass and tangerine hops; sweet, fruity and sugary; fresh, crisp mouthfeel with plenty of texture while still drinking light; more bitter than I remember previously with lots of orange, candy malt, apricot, white sugar with very mild farmhouse-y sourness; silky and really breaks out as it warms; some light wheat, lemons, apricots, spice and spruce; fills up the mouth with creamy yeasty goodness and light orangey hops and goes down smooth and rich; so damn good and the new batch was well worth the wait; over carbonation lets the nose flourish with some nice spicy and fruity esters; to me, this beer just has it all perfect nose, flavors and texture; very complex but the ingredients are well blended in to a perfectly delicious and drinkable belgian-style masterpiece; kind of a mix between two of my fav beer styles saison and Belgian strong golden; the beer was a game changer for me a few years ago and is still right at the top for what Im looking for in a beer

Updated Rating 10/15/09: 750 ml bottle; drank my last bottle of batch #1 w/ Brandon and Tom, so this guy had some age on it; certainly more musky and hops giving way to all the yeasty sweetness; texture and nose as delightful as I first remember it; fuzzy, soft, sweet, perfect; dare I say one of the best beers ever; cant wait for the new batch!!!

Original Rating 7/31/08: 750 ml bottle; a true joy to enter this as my 900th rating on ratebeer; and a special thanks to tom for sharing this gem of gems in addition to the countless brews youve generously shared with me over the last year; huge white head, thick enough to scoop with a spoon; leaves tons of lacing as it fades unevenly; intoxicating aromas of spice and fruit; basically a jacked up saison to me; glowing gold and mostly clear; texture is rich, smooth and almost beyond belief; drinks smooth and rich with lots of spice and farmhouse funk; floral, bready, yeasty and yummy; everything matches together perfectly - texture, aromas, flavors; hot damn, simply heaven in a bottle and one of the best; thanks tom!!!

Bottle. Pours surprisingly pale, gold rather than amber, with a thick pillowy, sticky, white head that laces extremely well. Nose is very estery and herbal, a rather tea-like interpretation of the style. This snt to say it isnt also big on the spruce and fruit, it is, withfreshspruce berries, oranges, stonefruit, and spice. Flavors are stonefruit, a TON of bitterness, herbs, the mouth does not show the remarkable delicacy of the nose, lost in excessive astringency. Very good.

750ml bottle, 2009 sainte-reserve, honey gold color, with a big rocky white head, leaving some belgian laces, yeasty, zesty, lemon, grapefruit peel, pear, pineapple esters in the nose with a nice lemon pie, lemongrass note, with some herbal, flower petal accents of lavender, african violet, with a floral hop leafy citrusy aroma follows through on a medium-bodied palate with a yeasty, fruity, peachy, pineapple, lemon, grapefruit, lime peel, starfruit, litchi, pear, flowery hop character of nice zesty, citrusy, leafy, grassy, lemongrass, faint spearmint hoppiness, with a lemon pie flavor, leading towards a warming, fruity, zesty, citrusy, lemony, hop leafy, grassy bitterness finish.

Pours a cloudy yellow with a large three finger white head. The head laces very, very, nicely. The aroma is quite herbacious, with citrus and pine showing as well. The flavor is qute intense, yet has a great subtle complexity. Oranges, grapefruit, grassy notes, thyme, mint, spruce, cream, spices, and an ever so slightly bitter finish. Creamy mouth feel. Really well made belgian style IPA.

Looks great! Pours hazy yellow with a thick foamy white head looks like a perfect Belgian blonde. The aroma is bold and hoppy with a distinct grapfruit aroma likely from the Amarillo. The flavour makes this beer very unique. It seems to ride the fence between Belgian strong and IPA. It has all of the style characteristics of a belgian, but is very very hoppy. However. The hops are not that bitter, but do offer an amazing flavour profile This is a great beer!

My god. This is one of the good ones, it really is. Semi hazy bright yellow gold with a huge pillowy white head. Aroma is fairly relaxed but still bloody good. Think of the best tripel / Belgian ale you have sniffed and its about that. Flavour is just OH MY GOD good. So much glorious fruit, such superb Czech bitterness from the Saaz and just a hint of sourness. Perfect balance of sugar and bitter. Utterly glorious spicy bitter finish. The alcohol is almost undetectable. In fact it only appears when I burp. Just about the most perfect blend of hops I have experienced. Saaz people, why the hell not? This is proof. There is nothing unusual or outlandish here, its just bloody beautiful. To quote my good friend Harrisoni, "sometimes the good ones are good ones, just because theyre good ones..."

Bottle Ive had for a while I think Dany sent it to me. Shared with some people at a tasting at my place. Pours a nice orange with a big fluffy head. The nose is incredible it emanates from the glass from a ways away. Nice yeast, nice hoppiness despite its age. Taste is sweet, nicely hoppy, nice belgian flavor. I gotta say i like this.

Pours bright gold into a snifter. Bright white micro head with excellent retention recedes slightly to coat surface. Lemon and grapefruit aromas. Crisp, dry and hoppy with upfront lemon, a yeasty middle and a lasting grapefruit finish. No sign of the abv.

Bottle at Ryans Midtown Hotel room tasting post EBF 2010: 2007 version. hazy golden pour with a huge thick fluffy white head. Great aroma of subtle spicy dry lemony notes and rustic dusty dry phenols. Fluffy body with a dry minerally flavor. Has a spicy citrus/lemon grass hop zestiness with a spicy minerally bitter finish. Nice and dry throughout. Awesome stuff. I tried it next to the 2009 version which was fresher, brighter, zestier and more hop forward. The 2007 had a more rustic, earthy and yeast character prominence. The two years faded the citrus qualities of the hops slightly. Both vintages were great.
